Easter Eggs

These eggs are so good! I used about 5 cups of chips instead of 4. My candy also looked like chocolate covered balls instead of eggs. I made a lot of variations. I made semi sweet and milk chocolate peanut butter eggs. I actually liked the eggs with semi sweet chips better. I also made white chocolate and semi sweet coconut eggs. I did not like the white chocolate ones but will try white chocolate peanut butter eggs next year. The semi sweet coconut ones reminded me of an almond joy bar. Yum!!! Making these will be an Easter tradition from now on.

Fish Fillets Italiano

I used 1/2 the fish(since my boys and I were the only ones eating) but still used all the veggies. I served the extra veggies over boiled potatoes. YUM! I do agree with other reviewers this does need salt and pepper. I had to add some while eating. I will definitely keep this recipe and try it on my hubby!

Cheater Pancake Syrup

My family uses alot of syrup. We eat breakfast for dinner once a week so I often run out of syrup in the middle of a meal! I did decrease the sugar in this recipe and it was still too sweet. I added a little corn syrup to help thicken it. I stored the mixture in the refrigerator and ate the remaining pancakes with the cold syrup the next morning. The syrup had thickened and was the perfect consistency. I will still play around with the sugar amounts but from now on I will make the syrup the night before so it can sit in the frig. Thanks for the recipe.

Mom's Buttermilk Biscuits

I had leftover buttermilk from cut out cookies this past Christmas. I do not like to throw anything out so I decided to make some buttermilk biscuits. My boys really loved these. The four of us polished off a plate of biscuits in no time.

Easy Tuna Casserole

1 1/2 cups uncooked pasta yields 3 cups cooked pasta. I found this out after cooking up about 2 cups. My boys ate this casserole right down with no complaints so it is definitely a keeper. It tasted just like I expected maybe a little bland since I used the fat free cream of chicken soup. I added a little milk and used albacore tuna.

Creamy Rice Pudding

This pudding had a very good flavor. It turned out thick and creamy. I would suggest tempering the eggs when making this. Also, I felt the cooking time was too long. I will definitely be making it again keeping those things in mind. It is a quick and easy recipe using ingredients I always have on hand. Thanks Erica!

Mama D's Italian Bread

I just recently purchased a Kitchen Aid stand mixer. I am having so much fun making homemade bread because the machine does all the work! I noticed the dough was a little sticky but after adding more flour it came together just fine in the mixer. I actually had nothing to use to mist the loaves with so my bread did not come out quite right but it was still good.

The only complaint I have about this recipe is that my family found it to be too salty. I cut the salt way down to about 1/2 tsp. Other than that it was very good. I will definitely be making this again and again!

Quick and Easy 20-Minute Chicken Posole

This was just okay for me. I have never had posole before so I have nothing to compare it to. It was a little spicy for my taste. I do not really like spicy food. I will probably leave out the green chillies next time. I also would have liked the broth a little thicker.

Herbed Sweet 'n' Sour Chicken

I made this recipe before and didn't like it. I tried it again and decrease the cayenne pepper to 1/8 tsp. It was good not great. I served it over rice with some of the sauce poured over top. It was so easy that I will make it again.

Instant Pistachio Salad

Focaccia Bread

I thought this was a very good bread recipe. It did not rise like I thought it would so I may take others suggested and let the yeast, sugar and water combine for about 10 minutes (like other breads) before mixing in the other ingredients. Other than that I was happy with this bread. It was my first attempt at focaccia. I will definitely make this again.

Easy Spinach Souffle

I am sorry to say this but this recipe was disgusting. The spinach was slightly crunchy even though I baked it longer. I used one box of spinach to the amount of sauce the recipe called for. No one liked it. My kids love spinach and they would not eat it. I will definitely never make this again. Sorry.

Tangy Honey Glazed Ham

This was a hit on Christmas at my house. We spread some of the reserved glaze onto the ham slices. I used a little more OJ probably about 1/2 an orange. It had a different taste but it was good. My husband really liked it. I will make it again.
