Salsa Chicken

Absolutely the best! I made this just for myself because the guys were having stromboli. My youngest wanted this after tasting it instead of the stromboli. I used Pace Picante mild, Taco Seasoning I from Bill from this site, minimal cheese and low-fat sour cream. I will definitely be making this again.

Quick, easy and good! The only substitutions I made were to use regular chicken broth and soy sauce. My kids ate it without complaining.

Oat Applesauce Muffins

As written this recipe should probably get 3 stars but I am giving it 4 because there is so much potential. Also, for only having a little over 1 gram of fat per serving I guess I did not think they were going to be to die for. I did not read the reviews before I made the muffins and thought they were kind of bland. I will try adding some splenda like others suggested. Also, you do need to wait until the muffins are completely cool before trying to remove the liners because they stick really bad. I thought the baking time was a little long but also a reminder (because I forget this alot), if you use a dark coated muffin pan decrease the baking temperature to 350.

Napa Cabbage Salad

Yum-o!!! I love this salad. I do make some changes to suit our taste (omit the onions and sesame seeds and decrease the almonds, butter & oil in a desperate attempt to lower the fat in this recipe since I love it so much).

Taco Seasoning I

I was so excited to try this. I have removed prepackaged food from our diet except for taco seasoning. This was so good. Mix up a big batch so you have it on hand and it is just as quick as opening a package. Thanks for the recipe!

Sour Cream Cucumber Salad

I love cucumber salad. I do not use green onion and I add a little sugar. I have also used cider vinegar. This is great over baked or boiled potatoes.

Very good fruit salad. I omit the bananas and sometimes use lemon pudding mix. You can add whatever fruit you like. I sometimes add grapes and strawberries.

Penne a la Vodka II

Used more vodka 2/3 cup and less half and half (trying to make it more figure friendly) about 1/4 cup. I may use a little more half and half next time. I really like this sauce. My 2 1/2 year old was eating his pasta plain with cheese and asked for me to put sauce on his! It must have smelled good to him too!

Zesty Slow Cooker Chicken Barbecue

Loved this recipe! So easy. I used Jack Daniels Original sauce and Wishbone Italian salad dressing. I did shred the chicken periodically while cooking. I just can't say enough. This is a keeper! Can't wait to try it on the hubby.

Breaded Ranch Chicken

This recipe is very good. The ranch flavor is not overpowering. It has been a hit with everyone I have given the recipe to. I have had this recipe for years since I am a Taste of Home subscriber. I definitely recommend it!
