Chicken Stir-Fry

Found this recipe while browsing for more stir-fry recipes. I have used this stir-fry recipe for years. My entire family loves it. Sometimes I use brown rice since it is healthier. Also, I change up the veggies to make it seem like a different dish.

Balsamic Roasted Red Potatoes

I am surprised that this dish received such great reviews. I agree with SamanthaA there is something missing. I can't say they were bland because they had flavor it just wasn't exceptional. Just not for me. I served them at a cookout and everyone agreed with me. Sorry but this recipe will not be made again in my house!

Chicken Enchiladas I

This recipe gets 5 stars for the taste but the excessive liquid bumped it down to a 4. Liquid was running out of the enchilada as I was putting it in the dish. It made the tortilla too soggy for my taste. Some reviewers added salsa which would be a good idea or just cut the tomato sauce in half and leave out the water. I used about 2 cups shredded chicken. I cooked a whole chicken instead of using boneless skinless. I will make this recipe again since it did have a good flavor.

Grandma B's Bean Soup

This was a hit. Cheap, easy and makes alot. My crock pot was filled to the top. Should be served with warm crusty bread for dunking! I will definitely add this to my soup rotation this winter. I used ham shanks instead of chopped ham. They cost around $1 and add more flavor to the soup. Plus you do get a little bit of meat to shred into the soup. I don't want potatoes in my bean soup so I omitted them but added a clove of minced garlic and some worcestershire sauce (saw that in another recipe). It did need a little salt which I added at the end of the cooking time after tasting the soup.

Mango-Lime Rice

I was disappointed that I couldn't find a mango in any of my grocery stores. I had to use a can of tropical fruit. It was good but my family didn't like some of the fruit. I liked it but made the mistake of stirring in the fruit and letting it sit. I should have known better it made the fruit warm. I used dried cilantro which I added in the beginning so it could simmer. I think it also needed more lime juice. Also, I will probably try it again with white rice. I can't get my family to like brown rice. Overall I think it is a refreshing change for a side dish. I am definitely going to make it again and hopefully find some mango!

Cucumbers in Sour Cream

I love this salad! I use light sour cream and add finely chopped vidalia onion. I serve it as a topping for cubed boiled potatoes or just as a side dish.

Hasselback Potatoes

I wanted something different and this worked. My kids loved the dish and wanted seconds. The cooking time does depend on the size of your potato. I think mine took a little longer than the recipe called for. I just poked one with a fork to test. I used parm instead of romano since that is what I had on hand. Also, I should have drizzled and sprinkled everything across the potato instead I went down the potato. I think going across will help everything drip into the cut part. I will definitely keep using this recipe. Quick and easy with ingredients on hand.

This is so easy and so good! I liked this better than the bottled syrup. We used Kool Aid tropical punch which only cost 10 cents. I always have sugar on hand so it was nice to buy something to treat my family for 10 cents! I can't wait to try different flavors!

Rosemary Ranch Chicken Kabobs

I am always looking for something different for dinner. I found this recipe and thought I would give it a try. I am glad I did. It was so good. The kids loved the skewers. I used light ranch dressing and marinated it for a couple hours. I do think if you use light or fat free dressing the amount of vinegar and lemon juice needs to be decreased.

Bourbon Whiskey BBQ Sauce

The only reason I would buy a bottled bbq sauce after tasting this would be if I lost all sense of taste. It is lick your fingers good. I did not make any changes to the recipe. I strained out the garlic and onion and let it sit in my frig for about 2 days. My boys 7 and 4 1/2 kept sticking their fingers in the bowl to taste it. I grilled 4 boneless skinless chicken breasts and generously covered them with the sauce and had enough for atleast 4-6 more. I know bbq sauce in a bottle is more convenient but this sauce is worth planning ahead for. The only change I may make will be to decrease the liquid smoke a little. This is my sauce from now on!

Hasty Chocolate Pudding

Quick, easy and delicious. When I saw the recipe didn't call for butter or eggs, I didn't expect it to be that good but I was wrong. I will agree with some that it does lack something but not enough that I will never make the recipe again. I am going to add a little salt next time and see if that does the trick. I didn't use a microwave since the recipe didn't saw what watt microwave to use. That will definitely make a difference in how the pudding will turn out. I cooked it on the stove top which is not hard just takes some time. I refrigerated it just until we were done with dinner. It was still slightly warm when we ate it. My son loved it and my husband had seconds. I am really glad I found this recipe since I try to stay away from boxed foods as much as I can.

Stove Top Pot Roast

This rating is based on the cooking method only. I make pot roast one way but will change the cooking method from the crockpot to slow cooking it in the oven. I kept forgetting to put the roast on to cook because I was sick and distracted. Finally, I thought of the stove top method and found this recipe to help me out. I browned the pot roast as directed. Seasoned it with salt and pepper and browning sauce. Put a can of beef broth in the pot and simmered away. I kept checking it the way I would if it was in the oven but I really didn't need to. I never had to add any additional water. It was so tender and the gravy was wonderful. This will be my method from now on.

Grilled Yellow Squash

I love this recipe. I also use it for zucchini. I omit the garlic and do not heat the oil for no reason other than it is one less step to do. I place the veggies in a bowl and pour enough oil on to coat them then sprinkle on some s and p and grill. They are beyond wonderful. I use them as my side dish when my guys are eating french fries and honestly I do not miss the fries.

White Sauce

I add a pinch of salt and pepper to season. Sometimes I add a cup or so of cheese to make a cheesy white sauce. This is a wonderful base for many recipes. I no longer use cream soups in any of my casseroles instead I substitute this white sauce or the cheesy sauce. I use it in chicken noodle casserole, green bean casserole (use velveeta in sauce top with french fried onion), great topping to trick your kids into trying veggies (worked for me when I was young) also courtesy of Rachael Ray it is a great "glue" for hot ham and cheese sandwiches or pour down over top for a yummy knife and fork sandwich. Couldn't live without it!
