Blueberry Ricotta Squares

I'm not really a "baker," more of a "cooker," but this sounded good & simple enough. I followed the recipe exactly, but for some reason it didn't brown right on the top. It browned in one spot in the middle of the pan, and about an inch out all the way around the pan, but the rest of it kinda remained uncooked looking. We tasted the parts around the edges, that actually looked like it was the way it was suppose to be and it was ok. A little bland. I still have leftover blueberries, so now I'm going to try my luck with a Blueberry Buckle recipe that I found on this site. I'm crossing my fingers that my baking skills will improve with this next attempt!!

Slow Cooker Chicken Stroganoff

I tried this for the first time yesterday. The hub & I found it quite tasty, and it was so easy. I cut both chicken breasts and thighs into chunks (bigger than cubes) and placed them, along with some diced onion in the slow cooker. I melted the required amount of butter (instead of margarine) and mixed the dry italian dressing into it, then poured it over the chicken pieces. I also added 1/2 cup of white wine. I started cooking it on low, at 1:30 in the afternoon and then went about my day. At 7:00, I added the cream cheese and cream of chicken soup, and started cooking extra wide egg noodles. By, 7:30, everything was ready, so I mixed up the noodles & chicken sauce, heated up some garlic bread, and dinner was served. Next time, I might add some green chilies to give it a little zip!!

Bow Tie Pasta with Sausage and Sweet Peppers

This was very good!! I used both spicy and sweet Italian sausages, 1 green pepper & 1 red pepper, plus onion & garlic. After cutting up the peppers, onion & garlic, I sprinkled them with Italian herb, oregano and garlic pepper. I set them aside and browned the sausages in a little olive oil (took the advise of another reviewer and did not drain after cooking the sausage). Then, I added the pepper mixture and cooked it for about 7 minutes before adding a full can of beef broth. After that was all hot & blended, I added the penne that I already cooked, and it turned out delicious. Served it with tossed salad and bakery fresh bread. This is going straight into the monthly rotation for sure!!

Ham and Chicken Casserole

We had this last night. My hubby and I both agreed that it tasted like Mac & Cheese with ham added. Not to say that's a bad thing, but I was looking for something with more of a "Wow" factor.

Bacon Wrapped Pork Medallions

I made this last night and both hub & I thought it was quite tasty. After reading the reviews, I experimented with using uncooked bacon on a couple of the medallions and partially cooked (as the recipe is written) and the partially cooked bacon worked out better. After wrapping the meat in bacon and browning it in bacon drippings, I put all the pieces in a casserole, then in the oven at 375 for 30 minutes (turning over once). The meat turned out very moist and the bacon that was partially cooked was completed in the baking process. I used the seasoning blend called for in the recipe and it was just right. We didn't find it too salty.

Anna's Amazing Easy Pleasy Meatballs over Buttered Noodles

I cut the recipe in half and we still have enough for leftovers (can't wait to heat those back up tonight). It was so easy and so good!! We will absolutely have this again from time to time. A nice change from the norm!
