Spicy Garlic and Pepper Shrimp

We enjoyed this recipe, but be warned that it is very hot. I scaled the portion size to four, which would have been 2.5 tablespoons of red pepper flakes. I thought that sounded like too much so I cooked it with only 1 tablespoon. That was more than enough! Next time I make this, because it was good other than being a little too hot, I will use 1/2 tablespoon of red pepper flakes for 4 servings. Other modifications: I cut way back on the vegetable oil, used an entire head of cabbage and 1lb shrimp for 4 servings, left out the cilantro (didn't have any on hand), and garnished it with green onion and toasted sesame seeds. Peanuts would make a great garnish too.

Easy Chinese Corn Soup

This soup is a great base recipe. My husband said it tastes better than the Chinese restaurant versions. I followed the recipe ingredients and also added 1.5 cups of frozen corn, an extra egg, and I garnished it with green onion and 1/4 teaspoon of sesame oil. It was so easy and so good. I will be making this again soon.

Acorn Squash

This was my first time cooking squash. I followed the directions but the squash didn't cook all the way through. Also, I thought the brown sugar & butter mixture made the squash too sweet for my taste, but I think that is personal preference. My husband didn't like it at all. I will stick to more savory uses for this vegetable in the future.

Best Steak Marinade in Existence

I only had 1 hr to marinate but it still gave the meat good flavor. I will use this again and next time will let the steak marinate all day. I substituted A1 for the Worcestshire sauce since I didn't have any.

Garlic Alfredo Tilapia

This was quick, easy and tasty! I used Mahi Mahi fillets instead of tilapia since that's what I had in the freezer. I only used 1 tablespoon of butter and at least double the garlic. I will be making this again soon.

Alfredo Potatoes

This was an excellent and easy recipe to make. I prepped it earlier in the day and put it in the oven to bake right before dinner. My husband loved it so I will definitely make it again. I made a couple substitutions - used regular potatoes at double the amount rather than large baking potatoes. They can fall apart when scooping out the pulp, but I crammed them into a baking dish so it didn't matter. I also subbed 1 cup of Italian cheese blend and 1/2 cup Mexican cheese blend for the cheddar and mozzarella and Italian seasoning for the thyme. Also did the last step in the oven rather than the microwave. Yummy!

Sloppy Joes II

Awesome recipe! I doubled it for my hungry family and substituted some BBQ sauce when I didn't have enough ketchup. It ended up being 2 parts ketchup to 1 part BBQ sauce. I also added some minced garlic. Tasted great! I will make this again soon.

Tuna Curry in a Hurry

This was a good meal for a busy weeknight but not something I would serve to company. I made many substitutions based on what was in my pantry and the suggestions of other reviewers. Subbed: red onion, red bell pepper and garlic powder (doubled onion & pepper), used 2 cans of tuna, plain yogurt rather than sour cream, 1 T olive oil, and doubled the curry powder. I also added some cumin and cayenne pepper. I served it over whole wheat spaghetti. My husband liked it. I used the chunk Albacore tuna from Costco because it's the best! I will be making this again and will have it over rice next time.

Herb-Stuffed Red Peppers

This recipe tastes delicious when made as written. I followed the recipe exactly except for omitting the chicken broth as I didn't have any. The cayenne adds a nice kick and the allspice and balsamic vinegar give the dish a depth of flavor that most stuffed vegetable recipes lack. My husband and I both loved it and I will be making it again soon.

Garlic Red Potatoes

Loved it! The lemon adds great flavor to the potatoes. I cut my potatoes into 8 pieces to make them bitesize and took the advice from other reviewers to alter the cooking time. I parboiled the potatoes and then baked in the oven. I will be making this again.

Baked Stuffed Tomatoes

Very good base recipe. I substituted parmesan cheese for the topping instead of bread crumbs and used cooked brown rice instead of instant rice. I had too much filling for the tomatoes so I put the extra in a casserole dish and cooked it alongside in the oven. My family enjoyed this recipe. I will make it again.

Quick and Easy Fish Tacos

I had a huge craving for fish tacos yesterday and this filled it. This is a good basic recipe that is easily adaptable to what you have on hand and your personal taste. I cooked reduced fat fish sticks in the oven and heated corn tortillas in a dry non-stick skillet for 15 sec per side rather than frying them. For the filling, I used shredded green cabbage since that's what I had and I also added diced onion, chopped tomato and shredded Mexican cheese blend. I skipped the tartar sauce and instead combined salsa and sour cream per the suggestions from other reviews. I also squeezed fresh lime on each taco. Yummy! My husband was a huge fan of these tacos so I'll be making them again soon. Thanks for a great recipe!

Greek Pasta Salad with Shrimp, Tomatoes, Zucchini, Peppers, and Feta

I made this salad for my small group and it received many compliments. The serving size is incorrect. It serves at least 12 as a side dish. I followed the recipe exactly except I used canned black olives instead of Kalamata, a green pepper instead of yellow and I forgot the oregano. The seasoning was a little bland for my tastebuds. Next time I will add more salt and pepper. I loved the idea of broiling or grilling the peppers and zucchini. I will make this again.

Roasted Beet Wedges

We bought some beets at the farmers market to try. My husband likes beets but I've never eaten them before. Found this recipe and made it last night. It was great. I could've eaten more beets. The only change I made was adding fresh ground pepper with the salt and dried thyme instead of fresh rosemary. Next time I'll try it with fresh rosemary from my garden. Thanks for a great and easy recipe!

No Mess Squash on the Barbeque

Very good. Nice light and fresh flavor. I put in the optional tomatoes and fresh parsley from my garden and extra garlic. Great side dish. I had it with Honey Mustard Grilled Chicken from this website. I will be making this again soon.

Tasty Lentil Tacos

These were great. My husband thought these were even better than tacos made with ground beef. I used vegetable broth instead of chicken broth and served the tacos with flour tortillas. They were great warmed up the next day too. This will be a new staple in our home.

Jazzed Up Couscous

I doubled the onion, garlic, tomatoes and cheese. After tasting it, it was still bland so I added salt, pepper and a sprinkle of red pepper flakes. With the modifications, this was good and my husband enjoyed it. I will be making this again.

Grilled Asparagus Salad

This was a big hit with my husband and friends. I broiled the asparagus since it isn't grilling weather here yet. I also didn't follow the exact measurements. I used one bunch of asparagus, one bag of spinach, the juice of half of lemon and I eyeballed the parmesan cheese and almonds. I also added some salt and pepper to the salad. I will be making this again soon. Thanks for the great recipe!
