Cranberry Walnut Slaw

I like this recipe and have used it many times. I leave out the walnuts but even so, it's delcious. A different, refreshing twist from normal coleslaw.

Ham 'n' Cheese Mashed Potatoes

This was a great way to use up leftover ham and potatoes. My kids who didn't like the potatoes yesterday (I used red potatoes and they didn't like the skins in them) gobbled this up today. I think the whipped cream trick is fantastic. Thanks for sharing.

Spicy Honey Mustard Pork Roast

I thought this was delicious. I cut way back on the pepper (only used about 1 1/2 t.) and it was plenty for us. I also cooked it a little longer. Wonderful, my small kids liked it too!

Pumpkin Cheesecake Bars

Ditto to many reviews - I wouldn't call these cheesecake bars. But they're delicious. Because they taste like pumpkin pie, I couldn't help but top it with whipped cream and a dusting of pumpkin pie spice. I also did the 9x13 recipe but otherwise left everything the same. Delicious. I dare say I liked these even better than pumpkin pie. Thanks!

Skillet Pork Chops with Potatoes and Onion

Ham and Beans

This was delicious! I cut down on the sugar (by half) as recommended by other reviewers and thought it was perfect. The spice was nice - it was a little strong to eat plain but over rice my family really enjoyed it. Might want to back off the cayenne pepper a little bit if you have mild mouths in the house, but I don't like things TOO spicy and I thought it was great. The ham blended so nicely with the beans. I used pintos because it's all I had and they were great. Yum!

I thought this was very good. I wish it were crispier, but based on other reviews I needed to cook it just a bit longer. But the flavor is very good. Next time I'll experiment to try to make it lower-fat. Thanks for a yummy recipe!

Cajun Chicken Pasta

This was tasty! I didn't expect my four-year-old to touch it but she really enjoyed it. I used less cream and added a little milk, then thickened with Ultra Gel and it was still rich and satisfying. Thanks for a keeper!

Creamy Artichoke Pasta

This was delicious, fast, easy, and pleased everyone in my family. Were I to make it again I might want more sauce and more artichokes, especially since I only used 8 oz of pasta and the recipe calls for 12. But I loved that I had everything on hand. My kids ate the noodles with just sauce and that saved the artichokes for the adults...win, win! ;)

T's Sweet Potato Fries

My family enjoyed these very much - even my one-year-old. I have made these twice - the second time I had only two large sweet potatoes but used the original amount of sauce and we liked them even better than the first time (when we used 4 potatoes).

Slow Cooker Pernil Pork

Followed the recipe exactly with one small addition of one packet of Sazon and it was delicious. I was nervous that the pork loin wouldn't come out tender but it was so good. And not too spicy for my kids. We all loved it. Thanks.

Easy Olive Oil, Tomato, and Basil Pasta

I used canned tomatoes (didn't have fresh) and think it would have been better with fresh, but it was still very good. I added small cubes of mozzarella cheese when the pasta had cooled some but not completely, and my family liked it very much.
