Cranberry Pistachio Biscotti

These are fantastic. I cannot believe I made something that tastes so good and it wasnt that difficult either. I chopped up the pistachios but other than that, followed the recipe exactly. Wetting your hands really helps mold the dough into logs. These taste great by themselves but even better with good coffee. I think the almond extract really helps take them over the top. Definitely will make these again...and again.

Cornbread Muffins I

These are sooooo good! They are very sweet but I am a sweets-a-holic so LOVED them. In fact I couldnt stop eating them!!! I used fresh corn, which I husked, and cooked in the microwave for 7 minutes. I also had to add a little more milk than the recipe said because it looked way too thick. They were done in 20 minutes. LOVE IT_THANKS!!!!

Bacon Chicken II

I chopped up bacon and onions and cooked until very brown. I mixed this into the barbeque sauce and then poured the sauce over the chicken. I covered with aluminum foil and it was done in 30 minutes. I added a piece of crispy bacon on top and some cheddar cheese which I let melt in the oven. It was very good! My boyfriend licked his plate clean!! We used KC Original BarBQ Sauce

Rhubarb and Strawberry Pie

Wow! I served this at Easter Dinner and got so many compliments with this pie! One person said it was the best one they had tried since 20 years ago when they were 10! I added a little bit of cinnamon and nutmeg to the fruit mixture but I forgot to add the butter on top! (No one noticed!) It probably cooled for over an hour before eating it and it was perfect! Not runny at all, I couldnt believe I made something that came out so pretty! I served with Very Vanilla Whipped Cream. (2 c. whipping cream, 6 to 7 Tablespoons sugar and 1 Tbs vanilla. Whip in chilled bowl with chilled beaters until nice and whipped creamy! Everyone raved about this! Much better than the cool whip) Anyway, I was very pleased and a request has already been put in for Thanksgiving!

Beth's Spicy Oatmeal Raisin Cookies

Mine did not come out like the picture, they spread more than I thought they would but the taste was still amazing anyhow! Crispy outside, chewy center. So Good! I added about 3/4 a cup of chopped walnuts and used a level teaspoon of cloves since it is easy to overdo cloves. I thought it was perfect! Oh and I used all butter. It is the same recipe that was on the can of oats except for the cloves. They add a nice touch. Thanks for the recipe! I am putting them into a bake sale to raise money for cancer.

Pecan Cardamom Bar Cookies

I made these on a larger pan than the recipe called for because it was all I had. They ended up spreading all over the place and I getting very crispy on the edges. They came out very thin and my boyfriend said he preferred the crispy ones anyway! The glaze is a nice touch,but please measure the cardamom exactly. I used a heaping tablespoon and I think the cardamom was a bit overwhelming. Use a level tablespoon or even just shy of it. Even with all the mishaps I do feel it is a good recipe. I think I will make it again in the right size pan but with a little less cardamom.

To Die For Blueberry Muffins

Well, mine didnt come out as pretty as the picture, but they were very very good! They did taste like bakery ones! I am a huge "crumb topping/streusel" fan but this made a bit too much for my muffins! Very good though!

This recipe was sooo easy and practically fullproof. Tastes just like something from a restaurant. I followed the recipe exactly but I used Captian Morgan's Spiced Rum because it was what I had on hand. Perfect! : )
