I am 22 and an Assistant Office Coordinator for Brinks Home Security here in Apopka, FL. When I am not working I like to draw, sew and of course COOK! I enjoy making things from scratch rather than using anything packaged because, though it takes longer, I can trust what is in it.
My favorite things to cook
I love deserts of all kinds. I enjoy anything that I can make and bring to work to share.
My favorite family cooking traditions
My mother taught my four siblings and I to cook and we each had a night to make dinner. This is where my love of cooking originated and also the creative aspect of making meals with what is on hand.
My cooking triumphs
I made my first cheesecake for Thanksgiving this year. It was a pumpkin cheesecake with a homemade gingersnap crust. When I say homemade, I mean it. I whipped up a batch or aromatic gingersnaps and processed them in a blender to make the delicous crust. Everyone raved about it even though I hid all the huge cracks with some homemade whipped cream!:)
My cooking tragedies
When I was a lot younger and in the beginning stages of following recipes on my own, I accidentally put it 3 TABLESPOONS of Baking Soda instead of 3 TEASPOONS of Baking Powder into a chocolate cake. Needless to say, the chocolate cake tasted more like soap than anything and no icing could save it. I learned quickly the difference between Tbs and Tsp.

Cranberry Pistachio Biscotti
These are fantastic. I cannot believe I made something that tastes so good and it wasnt that difficult either. I chopped up the pistachios but other than that, followed the recipe exactly. Wetting your hands really helps mold the dough into logs. These taste great by themselves but even better with good coffee. I think the almond extract really helps take them over the top. Definitely will make these again...and again.

Cornbread Muffins I
These are sooooo good! They are very sweet but I am a sweets-a-holic so LOVED them. In fact I couldnt stop eating them!!! I used fresh corn, which I husked, and cooked in the microwave for 7 minutes. I also had to add a little more milk than the recipe said because it looked way too thick. They were done in 20 minutes. LOVE IT_THANKS!!!!

Bacon Chicken II
I chopped up bacon and onions and cooked until very brown. I mixed this into the barbeque sauce and then poured the sauce over the chicken. I covered with aluminum foil and it was done in 30 minutes. I added a piece of crispy bacon on top and some cheddar cheese which I let melt in the oven. It was very good! My boyfriend licked his plate clean!! We used KC Original BarBQ Sauce
