Brooke's Best Bombshell Brownies

Yum! As in other reviews, did 1/2 brown sugar, then baked these in silicone muffin cups, leaving the insides a bit gooey. Didn't get too cakey despite the number of eggs, and didn't end up as "all edges" in the muffin tins (I don't like edges!) Definitely a keeper!

Penne Pasta with Spinach and Bacon

easy, really fresh, tasty! added a red bell pepper since I had it, and fresh tomatoes. cooked 1 bag of baby spinach, chopped, w the sauce for a minute as others suggested. omitted oil completely. I forgot the garlic, but it was still good!

Pasta Primavera with Italian Turkey Sausage

very good. my roma tomatoes weren't quite ripe, so to add a bit of moisture I added 1/4c chicken broth instead of the granules - worked perfectly!

Almond Orange Chicken

I was skeptical at first (especially as I was boiling the milk), but this turned out to be excellent. Some tips: Make sure you have enough butter when you flip the chicken, or the almonds burn. Next time, I'll make the sauce in a sauce pan while the chicken cooks, not wait for the same pan, so that the sauce and chicken are ready and warm together. Don't skimp on the orange flavorings. This was great with brown rice and veggies (sugar/snow peas which I sauteed in 1T of the sauce).

My Meatloaf

This is going to be my standard meatloaf recipe (and I usually hate meatloaf!) I needed an eggless recipe, and this one was perfect. Followed exactly, except that I spread with tomato paste and sprinkled brown sugar on top 30 minutes into cooking. Also, the suggestion of cooking in a pan larger than a loaf pan to allow fat to drain was great. Just make sure you spray the pan first for easy cleanup.

Cheddar Bacon Hamburgers

I'm not usually a hamburger person, but I really liked these. They were very moist and tasty. I followed the recipe exactly, except that I cut down the horseradish a bit. Next time, I'll use the full amount: while it smells strong in the raw burgers, it wasn't at all overpowering. Also- left the meat (90/10) in the fridge until the last minute and the burgers stayed together nicely while grilling.

Mom's Zucchini Pie

This recipe was great, and makes fantastic leftovers for lunch! I modified it to make it less dense. Zucchini: 1T butter instead of 4T. Filling: 3 eggs, 1.5 C mozzarella, 1.25 C ricotta, 1 small tomato (diced). Bake: 9x13 pan with crescent crust for 30-35 minutes. Even my anti-zucchini family didn't protest!

Easy Asparagus

Excellent recipe: very tasty and very easy. I didn't have purple onions, so I used some green instead. We tried your basic "saute with salt and butter" recipe for asparagus last night - this one definitely tops it and barely takes any more work.

Run For The Roses Pie III

This recipe is great! I only gave it 4 stars instead of 5 because I find it very hard to tell when it's done so sometimes it's over/under-done. The only ingredient alteration I make is adding a little extra bourbon and vanilla. After everyone loved the pie, I made these in bar form for a picnic: they turned out GREAT! For a 9x9 pan, I used 1.5 times the recipe. One circular pie crust still covers the bottom of the pan - I cut off the excess crust about 1/4" up the sides. Baked for 30-35 minutes. COOL COMPLETELY before you cut them into squares. Next time, I'll double the recipe and use a 9x13 pan.

Great flavor in the sauce, but cooking the pork that long made it much too tough. I doubled the sauce as some suggested, and added in extra vegetables, and it was still too much sauce.

Delicious Pumpkin Bread

Really liked this. Did as others suggested - cut sugar down, subbed applesauce for oil, increased spices. Great flavor and texture. I cooked this in 2 large loaf pans rather than 3 small, and it didn't cook all the way. I think I had it in for about 15-20 minutes extra, but I didn't set a timer so I'm not quite sure! Will try again and update.

Quick Chicken Zingarella

This left my lips burning with 1/2 the cherry peppers! Next time I'll do this with just some red pepper flakes. Otherwise, very very good. My family doesn't eat mushrooms and onions, so we added a small yellow and green squash instead. I agree that you should buy a good sauce as that really helps the flavor.
