Banana Banana Bread

Have Mercy! This banana bread is incredible! I have never tasted banana bread so moist and flavorful! It's a very dense loaf of bread! I took the other suggestions and added a cup of chopped walnuts and put the oven baking rack one notch lower then the middle. I also added a topping of 3 tablespoons brown sugar to 1 tablespoon water and drizzled and brushed it on top before baking. I didn't measure out my bananas but I think I added about 7 extremely ripe/black bananas. I was careful as other said to not over mix. I used my kitchen aid mixer to cream sugar/butter and incorporate eggs and then a wooden spoon to mix after. I would highly recommend this to anyone!

Apple Glazed Pork Chops

Delicious! Though I think 30 minutes was a bit to long for the porkchops I used. I think I will check them at 20-25 minutes from now on

Layered Chicken and Black Bean Enchilada Casserole

Really Really good. I seasoned the chicken with corriander, cumin, a little smoked tabasco, taco seasoning and garlic powder. I also sauteed some onion and garlic with it. I added a larger can of green chiles and put in extra cilantro ( I like lots of flavor) I didn't measure out the cheese and I'm sure I put more then it called for. Next time I'm going to crisp the tortillas. The tortillas weren't soggy but I think that a bit of texture change throughout would have been good with crispier tortillas. It would be super good with jalapeno but my s.o. is wimpy when it comes to spice so I mixed it in to my serving afterwards.

Chicken or Turkey Tetrazzini Deluxe

Great recipe and would make again. I halved the recipe added some extra mushrooms, used lowfat cream of mushroom, seasoned the chicken, used dry sherry (had on hand), put a bit extra cheese. Would be a great recipe to make ahead of time and freeze. I think I will use spaghetti noodles next time as that is what I'm used to with tetrazini. I grew up on tetrazini this is just a fancier version of what I ate.

Lime Chicken Soft Tacos

Chicken and Red Wine Sauce

Very delicious! Did make some changes. First sauteeing the garlic in the pan before the chicken and the putting the chicken in is a bad idea. The garlic will burn! Secound I used splenda brown sugar for less calories. I used a nice australian shiraz as the wine. I also put a bunch of already sauteed onion and mushrooms in with the sauce. Without this the dish would not have been nearly as good. I put the leftovers over mashed potatoes and it was yummy! the sauce is very sweet! Your chicken will become a red color from the stain of the wine don't be alarmed!

Six Can Chicken Tortilla Soup

Excellent and sooooo easy! I made some changes as others previously suggested I only did one can chicken broth and 2 cans condensed cream of chicken soup. I could have put some cumin in it. I used hint of lime flavored tortilla chips and garnished with mexican cheese a dollop of sourcream and diced avocado! Fast and inexpensive a college girls dream!

Spinach Tomato Tortellini

OH MY GOODNESS THIS WAY YUMMY! I made only some very minor changes. I added 1/2 cup white wine, added more fresh spinach - kept adding as the spinach cooked down until it looked right, added some oregano, some red pepper flakes (enough to give a bit of a bite) added more parmesan cheese and it turned out perfect! Next time I'm adding shrimp or some kind of seafood as it would be perfect with it and making it with some fettucini - I've already sent out the recipe to all my friends! It was amazing! Thanks Lela you made me look like the cook of the century in front of my boyfriend and roommate! Also it was super easy!

Rempel Family Meatloaf

Absolutely fabulous meatloaf! I made some changes - I did use the entire seasoning packet and didn't find it to be salty (I used lipton onion soup.) I used one tbls. of A-1 spicy steak sauce and 1 tbls. heinz 57. I put one heaping spoonful of minced garlic with some of the garlic juice. I used cheeze its as others suggested. I did 1/2 cup mexican blend cheese and 1/4 mozzerella cheese. I also used the lemon, ketchup, mustard, brown sugar glaze that was put on the "Glazed Meatloaf #1" on top and was delicious! Make sure to put a glaze on your meatloaf. Will make again thanks Connie!

Spicy Spaghetti Squash

Absolutely Loved It! Did increase the wine a bit to about 4 tbls as well as the red pepper flakes and garlic ( I like things really spicy!)Great for those on lowcarb diets and craving pasta! Definately make again! Note though I recommend using the garlic basil and oregano diced or crushed tomatos for extra flavor! Thanks Robyn!

Romantic Chicken with Artichokes and Mushrooms

Great Recipe! I'm on a low carb diet so I ate mine with just the chicken and put it over pasta for the boys. I did make some changes. I cut the chicken into chunks. I also sauteed the chicken with some garlic and wine. I used low carb chardonney. I used 18 oz. of artichokes and 8 oz of sliced mushrooms. I also only used 3 chicken breasts. Altered the capers to 2 Tbls. I also used alot of herbs de provence to flavor the chicken. I then added some lemon and lime to the sauce to give it more tang. THe sauce wasn't thick enough and I didn't want to use cornstarch due to the carbs so I used some heavy whipping cream being careful to make sure the sauce wasn't to acidic to curdle. I put the mixture for the boys over bowtie pasta. It was a hit and will definately make again was definately restaurant quality! Thanks!!!!!

Baked Ziti IV

This was really yummy! We did make a few changes - I used rigatoni instead of ziti because thats what I had on hand. I also substituted fresh basil instead of rosemary and increased it alot more then a teaspoon. I also added some oregano and mrs dash garlic blend. I increased the garlic to six cloves as well. Turned out yummy and will make again! Thanks Seth!

Easy Broccoli Quiche

Excellent quiche recipe. I did make some changes - I never added any butter to the eggs. I used 2 cups of cheese, a mixture of swiss, mozzarella, and sharp cheddars. I added 4 strips of turkey bacon cooked crispy and crumbled. I also used about a 1/2 of onion (seemed like an awful lot) put 2 med. sized spoonfulls of garlic and added mushrooms and extra pepper. Turned out really yummy and put it all in one deep dish pie crust. It did end up needing to cook 50 minutes to be done.

Stuffed Green Peppers I

I really like these I just can't follow a recipe to save my life so I switched it around a bit. I used ground turkey instead of ground beef to start out with to save on fat. I used one can of diced peeled tomatoes with roasted garlic. I added garlic, fresh basil, fresh parsely, oregano, garlic, cumin, cayenne pepper and 4 tbls of worcestershire sauce, and added a can of corn. I used minute rice as well and had no problems. I also switched it to the kraft cheddar melt cheese and used 1/2 cup onion. I used healthy choice tomato soup to make it a bit healthier. A huge hit and will make again only with some black beans in it as well next time.

Tortellini Salad I

First of all I loved the recipe... but I did make some changes I didn't put in the black olives (personal preference) but Kalamata olives and some marinated artichoke hearts would be delicious next time. I added one big can of white chicken to make it more of a lunch main dish. I used Balsamic vinegar. Doubled the mint, basil and parsley. Added a few dashes of hot sauce for a bite. I also added alot more lemon juice because I couldn't taste it (the balsamic may have drowned it out) so all in all about 6-7 tablespoons. I also increased the feta to a cup and used non fat. I also chopped about a 1/2 of cucumber into it and decreased the onion to a 1/4 of a sweet yellow onion.

Penne with Spicy Vodka Tomato Cream Sauce

GREAT RECIPE! I did make a few changes. I added 3/4 cup cream. Added more red pepper flakes. Put an entire mini absolute vodka bottle (2 shot bottle.) I added yellow and red peppers and mushrooms and sauteed them then added them in with the sausage. I also used spicy sausage. Put a tad bit more parsley in too. Topped it all off with some grated parmesan. THis is a definate make again and share with others recipe.

Pesto Cream Sauce

Made this for my bf's bday and was an absolute hit (and he's italian!) The sauce was super filling. I did use chicken instead of shrimp and put it over penne noodles instead of linguine but definately will make again. This makes restaurant quality pasta - I did add 10 cloves instead of 8 on the garlic.
