Quinoa and Black Beans
So yummy! you must rinse the quinoa very well otherwise it tastes bitter. I used the leftovers in a vegetarian bean chili a few days later.

Roasted Chickpeas
The chickpeas took forever to roast. Much longer than indicated on the recipe. The taste is good though.
