I read every single review before making this dish last night. I was skeptical because I was expecting watery mush. However, I was pleasantly surprised at the consistency, it really behaved and handled like mashed potatoes. I am not a cauliflower lover except if it is raw and I have a hard time digesting it so I eat it sparingly. I added a good spoonful of dried garlic and herbs, about 3 TBS of grated cheddar and I topped it off with a little bit of grated parmesan and baked it for about 15 minutes at 350. The presentation looked really good. My husband thought it was just delicious and wants me to make it again but I thought the first bite was weird as the texture in the mouth is not even close to the same as mashed potatoes. You must be a real lover of cauliflower to enjoy this. I give it marks for presentation and the fact that one of us loved it but I can't highly recommend this dish. Sorry.
