About this Cook
It's been a long time since I first joined AllRecipes and wrote my About Me! I'm no longer an "overworked tech support specialist," but I still maintain sanity by walking - actually more of hiking - and now I have a dog who keeps me company! I am now a vegetarian who occasionally eats seafood, so most of my time in the kitchen is spent trying to find vegetarian recipes that suite my family's tastes. Having a "meat and potatoes" husband can make this challenging!
My favorite things to cook
I love stir frys and making my own pizzas. And roasting veggies!
My favorite family cooking traditions
Every year my sisters, nieces and Mom get together during Christmas time to bake. It's a great time and I love being with all my girls.
My cooking triumphs
My first meal as a vegetarian consisted of me just kinda going off internal inspiration and seeing how it went. I threw a bunch of veggies we had together, coated with so EVOO and seasoned salt, then roasted them in the oven. Meanwhile, I doctored up a jar of tomato basil sauce, cooked some penne, then when everything was done threw it together, layering with cheese. While that baked I was inspired to make my own bruschetta. When everything came together at the end it was almost magickal - everything was super delicious and my husband started to have hope that this "vegetarian" thing wouldn't be so bad after all!
My cooking tragedies
I had been trying to embrace mushrooms more, especially now that the recipes I look at more and more feature them. I had a good experience at a restaurant with them cheese-stuffed mini portabellas, and so I went out and bought some pre-made ones at the grocery store. As soon as the aroma hit me from them roasting in the oven I knew it wasn't going to be good. I pulled them out and all I could thing was it smelled horrid - like rotting foot cheese. I forced myself to take a bite - it was all I had to eat for dinner that night.... awful. Tossed them out and haven't tried another since!

Dill, Feta and Garlic Cream Cheese Spread
I made this recipe in an attempt to recreate the spread used in one of my favorite veggie sandwiches at a deli I no longer live near. It's not a match to that, but it is FANTASTIC!!! I cut the recipe in half because it will only be me eating it, and used Neufatel cheese. In addition to my sandwich, it tastes great with crackers. So happy I tried this!

Balsamic Glazed Carrots
These were AMAZING!! The first time I made them I kept the baby carrots whole, and they just didn't cook right. This time I cut them up into 1/4 in dime sized pieces and they turned out perfect. It did reduce the cooking time a bit - sauteed for about 8 minutes with the balsamic vinegar/sugar mix in for about 2 minutes. Definitely adding this to our staple side dish.

Easy OREO Truffles
These are always a hit. They are kind of a pain, a mess, and take some time, but the end result is well worth it! I make them for the winter holidays and everyone in my group now looks forward to them.
