Hot Cocoa Mix in a Jar

Reviewed: Oct. 16, 2009
I just made this for the first time, since I'm a hot cocoa addict and a cold fall is upon us. It sounded like it would be delicious and different from other recipes I've made for home made hot cocoa, but the taste is still pretty much the same. I followed the recipe exactly, but found that 1/3 c. of powder into hot water just was not enough. It seemed very watered down to me. So I upped it to 1/2 cup and that was better. I do think I may put some more cocoa into the mix to take away the sweetness a bit and to make it richer. It did not make as much as I thought it would either, so I'll make it again with some adjustments and see what I end up with. Thanks for sharing the recipe!

Herbed Pork Roast

Reviewed: Oct. 10, 2009
This was absolutely amazing! My 16 year old son asked if I would make this twice a week. The sugar in the rub made all the difference. It was moist and juicy and very flavorful. I will always use this recipe when I make a pork loin. Thanks for sharing.

Old Fashioned Onion Rings

Reviewed: Sep. 16, 2009
I just made these tonight, and decided to try baking them instead of frying. They really turned out great. I did put some seasoned salt and paprika into the flour mixture, and I used buttermilk instead of regular milk, just because I had some that needed to be used up. It didn't drip off the onions at all, so that was a benefit to using it. I just put the o-rings on a plate after dunking into the milk mixture, and then did the bread crumbs. I poured about 1/2 cup of oil onto a large baking sheet and baked them at 400 for about 20 minutes, turning halfway through. They were crispy and I didn't have the mess of frying. Yum!

White Chocolate, Chocolate Cookies

Reviewed: Aug. 13, 2009
I thought they were awful. I followed the recipe exactly, but they just didn't have a lot of flavor. I think maybe if it had dark chocolate chips instead of white chocolate, they'd be better.

Truck-Stop Buttermilk Pancakes

Reviewed: Jul. 22, 2009
These are wonderful! A little more work to put together then some other recipes I've used, but well worth it. We used fresh mountain blueberries in ours, and my husband ate several more than usual, but said they'd be just as good without the berries. Thank you for sharing this recipe!

Potato Casserole

Reviewed: Jul. 7, 2009
Waaayyyy too much butter. Next time, I'd use at least a 1/4 less butter than what is called for. It was swimming in butter when pulled from the oven, but after it cooled a bit, it was less greasy. I've made similar recipes before that called for less butter and they turned out fine. Other than that, it was good.

A-Number-1 Banana Cake

Reviewed: Jul. 6, 2009
I gave this a "5" because I used half cake flour and half regular flour. It had a lighter, more "cakey" texture than I think it would have otherwise. Next time I may even use more cake flour and less regular. My husband said this was the best banana cake he'd ever had. I frosted it with a vanilla frosting from a can and it was yummy!

Taco Casserole

Reviewed: Jun. 8, 2009
I think this recipe is a good starter or basic recipe that allows for lots of changes if you want. I totally omitted the tomato soup and just added an extra can of diced tomatoes. I also omitted the macaroni and sour cream and instead, I had some corn tortillas I needed to use up, so I cut them up in place of the macaroni. I added a can of black beans as well. When it came out of the oven, I piled on lettuce, sour cream, guacamole, onion, chopped tomato. Yummy! It was a nice change from tacos, and it tasted like a restaurant dish when it was all pulled together like that.

The Best Banana Pudding

Reviewed: May 30, 2009
Yum! I'm not a big banana pudding fan, but I think it's because of the way it was made when I was a kid, living in the north. Now that I live in the south, I HAD to learn to like it, so I attempted a few different recipes. This one is the winner, in my mind. I didn't think it was "too sweet" as others stated. I halved this recipe for a smaller crowd, and I used only 3 large bananas, which was just fine. It has a nice, light, fluffy texture. Will continue to make!

Broccoli Cheese Soup V

Reviewed: Dec. 21, 2008
I followed the recipe exactly, but now wish I had used less Velveeta and used more shredded cheddar. It does have a distinct Velveeta feel and taste to it, otherwise. I might just use a half pound of processed cheese next time, and the rest in real cheese.

Cream of Pumpkin Soup

Reviewed: Sep. 20, 2008
I like this recipe. It is amazingly sweet for a dish that has no sugar in it. I didn't like the "croutons" with it, and even without them, the soup still is on the sweeter side, so I think putting brown sugar in, as other suggested, would be way too sweet for my taste. I do think a little more pepper would be a good idea, though.

Lentil Soup III

Reviewed: Aug. 25, 2008
This is a very good basic recipe. I made it for a neighbor who is diabetic as well as undergoing radiation and chemo, as it is nutritious and not much in it that someone can object to. I added some celery salt and cut down on the cumin (about half) added a bay leaf, and did add salt and pepper to taste. I didn't have any carrots on hand or I would have put those in. Next time I probably would saute the onions and garlic so they didn't look so obvious in it. And I would probably make it in winter and not on an 85 degree summer day, like I did today. LOL

Nany's Cheesy Cauliflower Casserole

Reviewed: Jul. 11, 2008
I thought this was good and very easy to make, but I also thought it really needed some salt and pepper! I used regular milk and cut the mayo in half, like others suggested, so maybe that's why it seemed a bit bland to me. I didn't add sour cream in place of the mayo. I just left it at the milk and half cup of mayo. I baked it for about half an hour at 375 and it turned out great, consistency-wise. The only thing I would do differently next time is add a teaspoon of salt and half t. of pepper. Otherwise, a great way to get the kids to eat cauliflower!

Roasted New Red Potatoes

Reviewed: Apr. 7, 2008
These were just okay. I thought they were a tad boring, but my husband liked them. We had them with gravy and they were good that way, but on their own they were just a bit bland for me. They just tasted like potatoes with salt and pepper. Nothing special.

German Chocolate Cake Frosting

Reviewed: Feb. 23, 2008
I'm so glad I made this recipe and not one of the others that were on this site. This one looked a lot easier but didn't have as many ratings. I decided to give this one a try and it was wonderful! My husband loves German Chocolate cake and so I made it for his birthday. I decided to go for a home made frosting instead of out of the can, and I'm glad I did. This is easy to make. I boiled it for about 20 minutes on medium, added the nuts and coconut and let cool. I didn't have to add anything to get it to be thick enough, like I read about in other reviews of other recipes. This one turned out great and my husband loved it!

Mom's Favorite Baked Mac and Cheese

Reviewed: Jan. 30, 2008
This is really good, but I didn't bake mine. It seemed enough people had issues with it after baking it, and it tasted great before baking, so I figured I'd just leave it the way it was before baking, and I'm glad I did. Right after I mixed the macaroni and cheese sauce mixture, I was thinking it didn't have enough of the macaroni and too much sauce, but after 15 minutes of sitting in the pot, the noodles absorbed the moisture and it was then perfect. I could see how it would get very dry if you baked it. I will make again!

Chili Rick's

Reviewed: Dec. 23, 2007
I'm afraid I'll be the decenting voice here. We didn't like this at all. My family kept saying it smelled like I was making BBQ sauce and it tasted like it. I didn't add the sausage, but other than that I followed the recipe exactly. Think I'll stick to my standby. Thanks anyway.

German Pancake

Reviewed: Oct. 9, 2007
Just made this for dinner and it was wonderful! The syrup really makes the dish. And it's nice to have all the ingredients on hand. It's quick, simple, and great. My husband said it should be our new Sunday breakfast, but it's really an 'anytime' meal. Thanks for the recipe!

Cherry Cola Salad

Reviewed: Jul. 4, 2007
The first time I made this, I didn't like it at all. It seemed very thick. But my son LOVED it and asked me to make it again, so I did. It was much better the second time, but I'm not sure why. I think because I used black cherry soda the first time, and a lemon-lime soda the second time. But now we really like it, and in fact, I'm making it today for our 4th of July dinner!
