Banana Cake II

I always make a recipe as is the first time I make it. I have made this one twice. Delicious! Best banana cake recipe around. Light, and like a cake and not like bread.

Savory Corn Muffins

I just made these and have to agree with many of the reviews. They are very salty! I also doubled the amount of sugar and it still wasn't enough to take the edge off, or give any sweetness at all (though, it probably wasn't intended to be sweet anyway). However, they are a pretty muffin with a good texture, so there are good things about it. I will make again, though add more sugar and probably very little salt, if any. The salt really takes over these muffins.

Lemon Square Bars

I always rate a recipe as it is written, because it bothers me when people rate it after they've done a bunch of stuff to the original recipe. How can anyone know if it's good or not? So, this is an honest review. I made no changes. I've made this 3 times now and it's excellent every time. Now, saying that, I have also made one change one time I made it. I used freshly squeezed lemon juice rather than the bottled. It was better. But either way, this is a 5 star recipe!

First Prize Strawberry Rhubarb Crisp

For some reason I have bad luck with crisps, but this one is different, so I thought I'd try it. Success! I was skeptical about putting the crumbly part on the bottom, thinking it would just be soggy, but it wasn't. I made a little extra of the crumb mixture, to put on top, but really it didn't make much difference and next time I will skip doing that (I'm about to make it again because my husband loved it so much). Great recipe. Thanks for posting.

Grandma Johnson's Scones

I can't rate these fairly as is, because I didn't follow the recipe exactly. When I read from some reviewers that the texture was more like a "muffin", I didn't want that. I wanted more of a crisp, crumbly texture. One reviewer recommended omitting the egg so as not to get that muffin kind of texture, so that's what I did differently. Instead of the egg, I added 1/4 cup of milk in its place. The dough was indeed very crumbly and hard to work with, but the end result was good, though still not as "dry" as I would have liked. My husband LOVES them. I added fresh blueberries instead of the raisins and baked them for 25 minutes (they are big). I also gave them a quick brushing of egg white and a dusting of some course grained sugar on the top before baking, and that added a nice touch.

Broccoli Chicken Divan

I always make recipes on here "as is" so I can give a fair assessment. This was very good, but I only gave it 4 stars because I think it would be better with a couple changes. Now I will say what I didn't like about it. It had too much broccoli for my tastes. It seemed more like a broccoli casserole than a chicken one. Next time I would half the broccoli (I used frozen but cooked it a little before putting it all together). I also wouldn't use the cream of broccoli soup, but maybe cream of chicken or mushroom instead. And I would add a half cup of sour cream. Other than that, very good.

Super-Delicious Zuppa Toscana

I love soup, so this looked good and had so many great reviews, I figured "what could go wrong?" I made it as written, with the exception of using kale instead of spinach (wish now that I had just used the spinach, because the texture of the kale ruins it for me),and a tad less red pepper flakes. I just found it to lack flavor. Probably won't make again, but I'm hoping I'll like it better after it has a day to meld.

Best Brownies

A little too sweet. I did use dark cocoa (didn't have regular) and pecans instead of walnuts, but otherwise followed the recipe as written. They are edible, and probably would have been better had I not used the dark powder cocoa. It definitely makes a thinner brownie. I doubled the batch and used a 10x15 pan.

Old Fashioned Mac and Cheese

I made this for the first time a few weeks ago, and loved it. The Swiss cheese really does make the difference. Even my picky son ate it. I've got a pan of it in the oven now, but didn't have the Swiss, so we'll see. I'm sure it will still be almost as yummy. Great texture. Smooth and creamy. This time, I also crushed up some buttery crackers to put on the top.

Willard Family German Chocolate Cake

My only complaint is that it's really not a chocolatey cake. Next time I will use at least twice the chocolate, or add some cocoa powder to the mix as well. My husband, who loves GC cake and this was for his birthday, asked me if it was a pumpkin cake, judging by the color of it. The rest of it was great. Good texture!

Grandma's Baking Powder Biscuits

I usually just make biscuits from a mix, but didn't have any, and needed a recipe for biscuits for a quick dinner of biscuits and gravy. Found this recipe, and it was wonderful! I made exactly as written. I didn't even want the gravy on them, and just ate mine with butter. The texture of these is wonderful, too! It's a keeper!

Easy Chili I

I'm not into spicy food, nor do I like chili all that much, but I made this for a youth group function and it was not only a hit with the kids, but with me, too! This is the only recipe that I use for chili now. It has a little kick but not overpowering at all. I follow the recipe exactly, except I leave out the green pepper because I don't like it, and it turns out great every time.

White Chocolate Chip Oatmeal Cookies

I don't even like white chocolate, but I LOVE these cookies. A friend of mine made them for my daughter's wedding, and we packaged them up and put them in cute bags for party favors. Everyone loved them. There are three things that make them even better. Add an extra cup of the white chips, toast the pecans first, and slightly mash the cookie dough down before baking. Also, bake only till slightly golden brown on places on the top of the cookie and no more, or the bottoms get burned where the chips were on the bottom. Pull them out when they are more white in color than golden.

Different Chicken Cordon Bleu

This was good and my hubby loved it. The only thing I would say is that it was a bit too salty, so next time I will decrease salt by half or leave it out completely, and I would mush the stuffing mix into the soup mix a bit. But very tasty and smells heavenly while baking!

Fried Broccoli

I'll admit, I was skeptical about this, and how it could taste any better than steamed broccoli. But it does! I used the florets that were smaller, for soup, so the frying time didn't take as long, and I didn't use as much of the red pepper flakes, and it was delicious. I'll always make broccoli this way from now on.

Pumpkin Honey Butter

We stayed at a BnB that used a similar recipe for the English muffins in the morning. We couldn't tell right away that it was a pumpkin taste, since it was so subtle, but that is what we liked about it. The owner of the inn told us it was pumpkin. The texture is more like a flavored honey, rather than a whipped consistency, but that's exactly what we were looking for, so I'm glad that it didn't turn out the way the picture represents. :-)

Aunt Anne's Coffee Cake

I enjoy making coffee cakes on Sunday mornings for my family. This morning I wanted a quick and easy one to throw together, that didn't include a cake mix (trying not to eat stuff with preservatives), and found this recipe. Though this recipe is easy to throw together, it has a rough texture. The topping is off looking (needs brown sugar), and it seems almost greasy when you first take it out of the oven. The flavor is okay, but I won't be making again.

Chicken Cordon Bleu II

This was very good. My picky teenaged son loved it, and so did my husband, both picky eaters (okay, so the son picked out the ham and cheese). I forgot to add the cornstarch, but it was fine. I used leftover ham and the slices were a bit on the thick side, which affected rolling it up. I browned each breast and then stuck them in the oven to finish cooking, while I made the sauce on the stove. Yummy!

Slow Cooker Chicken and Dumplings

I have always made my own chicken and dumplings from scratch, but this recipe has changed my future preparations. My family liked this better than mine. The only thing I wish I had done is to let the biscuits stay in and cook longer than 30 minutes, as they were a bit doughy still. I also used chicken broth instead of water, but it did make it a bit saltier. Still, a great and easy recipe!
