October Oatmeal Pumpkin Muffins

Yummy. I added pecans and next time might add some raisins too. I like that there is no oil or butter in the recipe and they are still super moist.I think you could cut back on the sugar quite a bit and they'd still be great. Thanks!

Pretty good recipe. Simple to make. I left out the relish since I don't care for it. Make sure you mask the chickpeas well. Would make again.

Classic Waffles

I liked these because they were quick and easy to make. And, I typically have all the ingredients on-hand, unlike the buttermilk which some recipes call for. Fluffy and light on the inside. I prefer a slightly sweeter batter, maybe a little more vanilla and some cinnamon. However, DH liked them as-is. These will be a repeat in our home.

Apple Pumpkin Muffins

I made these with applesauce rather than oil to reduce the fat content. I thought these were a little sweet (could be from the applesauce sub) ... hubby thought they were just right. He has more of a sweet tooth though! Next time, I'd reduce the sugar just a little and increase the pumpkin pie spice. This one is a keeper.

Hamburger Vegetable Soup

Overall the recipe is okay, but I would definately make some modifications if I were to make again. We prefer a little thicker soup so I would reduce the water and add another can of tomato sauce or a can of diced or stewed tomatoes. Also, the broth is a little one dimensional so I would add in some garlic and other seasoning when browning the beef.

Boilermaker Tailgate Chili

This recipe is okay but not as good I expected based on all the reviews. I followed the recipe exactly except for leaving out the bacon bits (because I didn't have any)and I found it to be way to salty - I cant imagine how salty it would have been if I ate my bowl with corn chips as the recipe recommended. Next time I think I will leave out some of the bouillon and see if that helps. It's a good base though.

Oven Baked Jambalaya

I am not sure whether it was too much liquid or too long of a cooking time but the rice was mushy and there was too much liquid. Also, next time I might add cooked shrimp at the last minute, didnt really care for the texture of the shrimp with this cooking method. This recipe was better day two. Would be better with a few tweaks. Thanks. Edit: Have determined that using parboiled rice is key to keeping the rice from getting mushy. Once we made that change, this became a recipe to save.

Grandma VanDoren's White Bread

This easy recipe was okay but nothing special. I wanted a bread a little fluffier than my standard recipe and based on the reviews I expected this to be super fluffy which it was not. I guess I was expecting more based on all the rave reviews. Overall, not bad but not great.

Amish White Bread

This was my first try at making bread and and it turned out well. It was a sweeter bread - like reviewers said, almost the taste of Hawaiian bread. A little denser than I would prefer for an every day bread. I might use this with some cinnamon and raisins mixed in for breakfast. Thanks!

Blackened Salmon Fillets

Very good blackened seasoning. I used far less butter than the recipe called for and it still turned out great. I also added a little garlic powder to the mix. Hubby called it a 10! Thanks.

Slow Cooker Lemon Garlic Chicken II

Very good, would be 5 stars with a few tweeks. The recipe was a little salty for my taste, I will reduce the salt next time. Also, I cooked for 6 hours on low but chicken turned out a little overcooked. Next time, I think 4-5 hours would be plenty. Will definatley make this again, thanks.

World's Best Key Lime Pie

I prefer my key lime pie more firm and less fluffy. However, it is very tastey and easy to make. I added a little more lime juice as we prefer a less sweet and more sour taste.

Yuck! I agree with the previous reviewer that called this mush. It looked horrible and tasted bland. I ate a few bites and trashed the rest. Would not make this again. I gave it the second star due to the ease of the recipe.

Easy Slow Cooker French Dip

Sorry, but this one was just bad. The meat was tough and bland. The au jus turned out okay after I added tons of garlic, onion powder, onions, and worchester sauce. After 7 hours, I pulled out the meat, cut it up, and added it back to the slow cooker for an hour to make it juicier but it still was not great. I would not make this again.

Slow-Cooker Chicken Tortilla Soup

This recipe is great and so easy to make. To save time, I used cubed raw chicken instead of cooked shredded chicken. I also used all chicken broth instead of water, omitted the additional salt, and omitted cilatro which I don't like. Hubby requested that I add this one to the rotation!
