Cake Balls

I made these for my mother in law's Christmas cocktail party and everyone thought that they were professionally made. When I told them how easy they were to make, everyone was in awe. I made red velvet with cream cheese frosting wrapped in chocolate. Some had white chocolate drizzle, crused pecans and coconut. Fabulous!

Grandmother's Buttermilk Cornbread

Great cornbread! My husband dislikes cornbread had seconds. It was moist and firm, with a touch of sweetness. Loved it!

Crispy Edamame

A different way to eat edamame. I liked it but it was not crispy. They were more chewy but tasty. I was baking something else so I kept the temp at 350 but in reading the other reviews, I don't think it would have made much of a difference. I will definitely make it again.

Baked Oatmeal I

It was very good. My only changes consisted of no raisins (we don't like) and only 2 tab of oil. I'll try it again with no oil and egg beaters as others have suggested. My picky 11 yr old daughter ate it for breakfast this morning with no reservations. Thanks for the recipe!

High Temperature Eye-of-Round Roast

Just like others, I thought this was a strange way to cook a roast, but as others mentioned, I was sold. The roast turned out tender and delicious. I thought for sure that it would be like shoe leather since it is such a tough cut of meat, but we were pleasantly surprised. I had a small cut, 2.5 lbs for 3 of us and cooked it about 15 minutes at 475, then turned it off for 2 hrs. I will most definitely make this again!

Butternut Squash Soup

Great soup! I roasted the squash as recommended by others. Since I was roasting the squash, I roasted a garlic bulb as well and put it in the soup with the squash. Used good quality chicken stock and only one package of cream cheese and it was phenomenal! I'm embarrassed to admit that I made it two days in a row.
