Peanut Butter Noodles

This was soo good! I only gave it four stars as I modified it quite a bit. I used: 1/2 cup chicken broth, 1 tbsp minced ginger, 3 tbsps soy sauce, 2 tbsps peanut butter (make sure you use NATURAL, PEANUTS ONLY PB- makes all the difference between jiffy slathered noodles or a peanut sauce!) 1 1/2 tbsps honey, 2 tsps ground cumin, 1- 1 1/2 tsps ground corriander, 4 cloves minced garlic, and fettucine noodles instead of udon. My 19 month old son LOVES this and I will definitely make it again!

Chewy Coconut Cookies

So, so good! I only had shredded coconut- but it worked well and gave it that yummy coconuty texture. Half the batch I dipped in melted chocolate and they were fabulous too. Next time I will try adding cocoa to the mix and see how that turns out- these are great cookies and really lend themselves well to experimenting.

Choco-coconut Bars

Excellent recipe! So good.. I just loved it. Atip though.. when dipping the bars, I put them on a small (greased) spatula and then lowered that into my chocolate and used a fork to slide them off. Worked wonderfully!

I modified this to suit what I had at home. I didn't have peanut oil (used olive oil)left out the ginger, lemon greass, fish sauce and bok choy. I used 2 cans coconut milk, and only 3/4 cup of chicken broth (instead of water) I also skipped the cilantro. I added rice noodles with 10 minutes cooking time left, and I ended up with a wonderful dish of noodles and sauce- which was just excellent! The only thing I would have changed would be to add more broth, since I needed more liquid, but it was excellent the way it was. So maybe it wasn't this recipe in the end but this was what I started from anyway. I think no matter what you do to this it turns out well, so have fun with it!!
