Grandma's Raspberry Bars

this is now my go-to recipe for bars. i've used leftover jam, my sister's homemade apple butter, my leftover thanksgiving cranberry sauce... if you have a sauce or spread, you can sandwich it into this recipe and be totally happy.

Honey's Butter Cake

this was a really nice starter recipe, easy to follow and make. i did every by the steps except for one: i made it a chai bundt cake, with allspice, ground cloves, ground ginger, and a little black pepper mixed with sugar, instead of just cinnamon. it came out very nicely. :)

Mexican Rice I

yeah, this is pretty much delicious. i use short grain instead of long grain rice, and it fluffs up perfectly in twenty minutes. also, like many other people, i've used the rotel tomato/chile mix as well as diced tomatoes, and instead of water, i use chicken broth. mmm.

Creamy Rice Pudding

outstanding recipe. i used medium-grain brown rice, which adds a whole new level of taste, and a boatload of cinnamon, because cinnamon makes everything better. :)

Fluffy Whole Wheat Biscuits

this is a really nice little recipe. i followed the recipe exactly and dropped the batter in lumps onto my boyfriend's chicken-mushroom-veggie-sauce mix. we baked it at 450 for fifteen minutes, and the sauce kept the biscuits moist while allowing them to cook all the way through. i could easily see adding an extra teaspoon of sugar and some dried fruit for scones; very versatile.

The Best Red Enchilada Sauce

this is an easy, excellent enchilada sauce. i only had safflower oil on hand, and i used the simmer-in-broth-instead-of-soak-for-an-hour shortcut, and i threw all the beef broth in at once stick-blended it on the stove, and it came out juuuusssst fine on top of enchiladas made with leftover turkey and squash.

E-Z Drop Biscuits

it occurred to me, as i came back to this recipe for the umpteenth time (to use as a topping for veggie pot pie, because i'm too lazy to buy, let alone make, a pie crust) that i never rated this simple, excellent, go-to recipe. back when i had a fully stocked and functional kitchen, i would always stir in some dried sage. these are versatile and awesome.

Easy Garlic Chicken

this was pretty good. i used panko crumbs mixed with a little salt and pepper, and halved the recipe (i had a pitiful amount of chicken on hand), and made nuggets.
