I cannot believe I have not rated this. My go to, can't wait to eat comfort food that is versatile.the first time I followed the recipe exactly and fell in love. After that I have played with it but not much! I don't cook poultry by time, instead I use a thermometer. A ooking spray on the outside, butter in the cavity, few things I few things i have tried was starting it in the crockpot and then towards the end transferring everything to a roasting pan. That makes delicious moist chicken. I have also just wadded up foil balls, sPrayed it with cam not stingy with butter. It really allows the skin to crisp. The flavor is delicious, the chicken is moist and the simple veggies just make the dish.
We are a family of three. One 5 lb birds provides us, usually four meals. After we eat on the first day i boil the carcass and make stock. Day one is leftovers. Day two is leftover creamy chicken enchiladas. Day three is chicken salad sandwiches and finally, day four is Zuppa Tuscano with Italian toast.
