Grilled Potatoes and Onion

Easy. I tossed everything in olive oil, instead of butter. Added some fresh rosemary and some seasoning salt. 30 minutes on the grill was fine, but I don't think you could overcook these - maybe even longer would be better.

Crustless Spinach Quiche

This is delicious, quick and easy! (Very inexpensive, too.) I used Cheddar cheese because that is what I had on hand, but I think you could use any cheese you want, and it would work. I also only used 2 cups of cheese because I ran out...but it seemed like plenty! I will probably stick with two cups in the future, just to make it a bit healthier. This would be good for breakfast, lunch, or dinner! My five-year-old liked it too.

Pumpkin Chocolate Dessert Cake

I was really disappointed by this recipe. I bake often, and I was really looking forward to this one, given all of the good reviews. The cake was bland, it definitely needs some salt. It was also on the dry side - surprising, because many people raved about how moist it was. The frosting looked beautiful, but hardened up and didn't taste all that good. I brought this one to a dinner party, and most people (myself included!) only took a few bites and left the rest.

Mama D's Italian Bread

I didn't care for this recipe. My loaves came out with a soft crust (I tried the steam bath that another reviewer mentioned). It was good, but I have other recipes that I like better. I had to use a LOT of flour.

Easy Sugar Cookies

Great, quick easy cookie! I cooked for 8 minutes, and they are soft and doughy. Delicious. The dough was great to work with, be sure the butter is very soft before beginning (I softened in the microwave). I rolled them into white sugar before baking.

Special Potato Salad

This is delicious! It's got a nice zip from the vinegar and the yogurt. I made a few substitutions, based upon what I had on hand. (I used plain greek yogurt instead of regular, skipped the sour cream, bacon and celery, used green onions instead of red, and used whole grain dijon mustard.) Very very good!! Would have been even better if I had bacon on hand, but it's so good without it, we don't even miss it.

Spinach Stuffed Chicken Breasts

Yum! This was good, and very easy. I did not use bacon, because we didn't have any on hand, but I'm sure it would have been great with it!! Also, I pounded the chicken thin and rolled it up with the filling, instead of butterflying. Very good! Cook time was a bit long - I might try less next time.

Eclair Cake

This is very similar to an eclair. It's not a very "elegant" dessert, but it is delicious. My 3yo loves it. To make spreading the frosting easier, put the container in the microwave for 20 or 30 seconds, stir, and then just pour it over the top, it's MUCH easier than trying to spread it on.

Puddingwiches

My mom used to make these when I was little, and I found the recipe to make for my kids! These are addicting. The graham crackers get kind of mushy in the freezer, like the cookie on an ice cream sandwich. Yum!

Great Pumpkin Dessert

This tasted great! It somehow cooked a little bit hard, maybe because of the butter? You had to fight a bit to push your fork down into it. But it tasted great, my guests enjoyed it.

Chicken Noodle Casserole I

Espinacas con Garbanzos (Spinach with Garbanzo Beans)

Yum! So easy, and delicious! It looks so simple, but the flavors really come together, and it tastes awesome. My husband and I ate the whole thing for our main dish! It does not have a very "spinach-y" taste, probably because of the seasonings. Try it!

Hot Spinach Dip

This was very simple to put together, but I don't think I'll be making it again. It was OK (tasted better after it cooled down a bit), but it wasn't outstanding. It was missing something...more seasonings? I couldn't put my finger on it.

Whole Wheat Beer Bread

This is great - quick, easy, and tasty. We always have it with chili. It also makes great toast! My 3yo and 1yo like to eat it, too. I've had the best luck using a JW Dundee's Honey Brown Lager, but try it with different types of beer! I usually do a little less brown sugar than it calls for, but that is just our personal preference.

Good and easy! Quick to make, these are ingredients I always have in the house. I used a whole 10oz box of frozen broccoli, instead of just the cup. My 1 year old loved it too!

Overnight Caramel French Toast

This is a fabulous recipe! As written, it is a 4 star. Do NOT use regular sandwich bread! You MUST use a crusty french bread loaf, it makes all the difference. Also, the additional 1/4 cup of white sugar is not needed. This is so easy to prepare, and can be made the night before, which I love! I've made it for Christmas Day breakfast, and Easter Brunch! Leftovers the next day are fabulous, too. If you're cooking this for more than 4 people, double the recipe, you won't be sorry!

Exquisite Pizza Sauce

Pretty good! I was out of honey, so I used white sugar. I only used 1 tablespoon, based upon other reviews, and it was still too sweet for me. I also had to add a little more water, the sauce was a little too thick for me. Good flavor though, will use again, but next time I'll just add a pinch of sugar/honey. UPDATED: This is our go-to sauce recipe. I use it every Friday night, with these modifications: 8oz water instead of 6oz, and only 1 scant teaspoon of honey, instead of 2 Tbsp. It's great, and I usually double it and freeze the extra, it thaws beautifully!

Easy Pizza Sauce III

Good! Be sure to make this several hours in advance, so it can sit, and the flavors can mesh together. I love oregano, but I think this recipe had too much. I would half the amount of oregano next time.
