Lemon Cake

I made this for my daughter's birthday and everyone loved it! Used 9 x 13 pan, lemon cake mix, and lemon pudding. As someone else said, be sure to beat batter for the full time and cake will rise nicely.

Creamy Mango Sorbet

I made mine with what I had on hand: 1 1/2 cups frozen mango chunks, 1/2 cup of honey, a mixture of fat-free half and half and evaporated milk, and water. Three hours later, it was only partially frozen, but it tasted great! If you get impatient, it would make a lovely smoothie (like a mango lassi). I served it with a little nutmeg on top.

Sausage Cabbage Skillet

I served this over rice, and the whole family loved it! Although the ingredients are simple, it has a lovely taste. I didn't use the green pepper or garlic, and I diced the potatoes so that they'd cook faster. For those who haven't cooked cabbage before, it cooks down a lot so don't worry about piling it up in the pan.

Merry Cherry Bars

I got this recipe from my mother-in-law. She uses red cherries only, does not chop the chocolate candies, and bakes them in a jelly roll pan. They look beautiful and taste great!

Chicken Satay

Wonderful! We LOVED this! I cut the chicken in strips, marinated it for about 2 hours, and cooked it on the George Foreman grill. It was very moist and tender, unlike most chicken I've made on the GF. I served it with Best Peanut Sauce from this website...mmmm...

Chocolate Covered Strawberries

I didn't have shortening so I just melted semi-sweet chips in the microwave. It may not be as smooth as with shortening, but it looked fine. If you only dip about half the strawberry, like in the photo, you can probably do 2 lbs with a bag of chips. Be sure the bowl and the strawberries are DRY!

Quick Peanut Butter Cookies

These are yummy and quick -- perfect if you want to make a last-minute treat. Next time I'll leave out the baking soda though. It gave the cookies a slightly bitter taste, and I'm not sure what its purpose is in this recipe. There are other recipes for the same cookies using only the first three ingredients.

The Best Zucchini Fritters Ever

I shredded the zucchini, used gouda instead of romano, left out the milk, and fried them in margarine. They held together nicely and had a nice, simple taste. We ate them with sour cream.

Mint Chocolate Cake

My son wanted a chocolate mint cake for his birthday, and this was great! I used my favorite chocolate cake recipe instead of a mix, and I didn't add the peppermint extract to the chocolate. My mother-in-law uses the same frosting on chocolate brownies and calls them "Grasshopper Bars" -- in my opinion, the frosting pairs even better with brownies than with cake.

Caramel Pudding Cake

This is lovely, simple comfort food. The cake is like a tender biscuit, and the water and brown sugar form a pudding layer on the bottom of the cake. When serving warm, spoon the pudding on top like a sauce. I did boil the water before baking, as that's the method I've seen in other pudding cake recipes.

Pepperoni Bread

We love this! It's nice for a party or a simple family dinner. We serve it with spaghetti sauce for dipping. I do find that it tends to brown on the outside before the inside is done, so I cover with foil for the last 10 minutes.

Cornbread Muffins I

Yum! We all loved these, including my picky two- and five-year olds. They are quite sweet, so if that's not what you're looking for, reduce the sugar. I used a half-recipe and made 20 mini muffins with about 10 min. baking time.

Peanut Butter Noodles

Yummy! I've tried a couple other peanut noodle recipes and the taste and texture of this sauce is my favorite. I used spaghetti, ground ginger, and a few drops of tabasco instead of chili paste. Added broccoli and topped with strips of fried egg.

Black Pepper Beef and Cabbage Stir Fry

I've made this several times now and it's a new family favorite. I use a pound of beef and a whole cabbage for four people. I make it even simpler by omitting the bell pepper and not thickening the sauce. Also, I put the lid on for a while to let the cabbage cook down and soften.

Cioccolata Calda (Hot Chocolate Italian-Style)

I live in Europe and this is a great recipe for the type of hot chocolate served in restaurants here. Expect it to be thick and, after boiling several minutes, very hot. I like to eat it with a spoon. Delicious and warming on a cold day.

Traditional Salisbury Steak

Delicious, and I didn't even use the mushrooms and onions. The meat was so tender and delicately seasoned. The gravy is not the beefy type that I associate with Salisbury steak, but we really liked the taste of it anyway. I served it with boiled potatoes and carrots, and the gravy went nicely with them as well.

One Bowl Chocolate Cake III

Honey-Peanut Butter Cookies

These are wonderful, chewy cookies that bake up perfectly every time. I use margarine and add a bit of almond extract because I love the taste. To keep the fork from sticking, I sprinkle a little sugar on the top of each cookie instead of dipping the fork in flour -- although my fork lines always disappear when the cookies are baked.

Black Bean and Artichoke Burritos

My husband loved these, as did my 4- and 6-year olds! I sauteed the artichokes, beans, and onions, seasoned them with paprika, cumin, and garlic powder, then added canned tomatoes. I baked the burritos at 350 for a little while to get them crisp, then served with pico de gallo and sour cream. Yum!
