Impossible Coconut Pie II

Old Fashioned Coconut Cream Pie

This was awesome! I did make it with 1 1/2 c. coconut milk and 1 1/2 c. heavy whipping cream. Cooked it in the microwave for between 5-6 min, whisking after each minute until it thickened. I did not toast the coconut in the pie, just what went on top. Also make my own whipped topping with 1 c. heavy whipping cream, 1 tsp coconut extract & 3 T. powdered sugar. Don't make the topping until shortly before serving. Mine whipped up nice, but turned too creamy overnight, so it was messy. Still good, just messy.

Quick and Easy Pizza Crust

This was great for ease of making. I used a rectangular raised edge cookie sheet sprayed with a little cooking spray and spread it out right on there. I did try other reviewers suggestions of putting oregano, basil and onion powder in crust as well as sprinkle it with Italian seasoning and Parmesan cheese after crust was spread and before adding sauce and toppings. I thought it was still bland, so will next time add some minced garlic when mixing up the dough.

Chef John's Blueberry Muffins

Only changes were to use low fat blueberry yogurt in place of sour cream, as well as frozen Maine blueberries in place of regular fresh blueberries. This made 24 regular-sized muffins, and I baked for only 20 min, rotating pans half-way through. The lemon zest is a must.

Unbelievable Chicken

Magic Peanut Butter Middles

I followed another reviewers directions and made the following changes: I added 1/8 tsp salt to the peanut butter/powdered sugar part and rolled into 30 balls and froze on cookie sheets lined with parchment paper. Then for the cookie part, I used 2 eggs, added a dash of salt to the dry portion, and after mixing wet ingredients & dry ingredients together, I added 1/2 c. mini semi sweet chocolate chips.

Cowboy Oatmeal Cookies

I changed oats to 2 1/2 cups, omitted chips and add 1 tsp. vanilla with the eggs and 1 tsp. ground cinnamon with the dry ingredients. Yummy!

Slow Cooker Chicken and Dumplings

I put 6-8 partially frozen chicken breasts into crockpot. Use chicken broth instead of water. I also used cream of chicken with herbs condensed soup. Heat in crockpot on high for 5 hours. 90 min. before end, shred chicken. Taste to see if you need to add salt, and if so, add it now. Then, take one container biscuit dough and tear each biscuit into 4 pieces. Drop into crockpot. Cook for 90 min more and it will be ready to serve. Yummy comfort food!

Easy Shake and Bake Chicken

I used boneless chicken breasts, so I cut the cooking temp to 400 degrees, but cooked full time. It was so tender and yummy. Used half the butter, 1/2 c. flour, 2 1/2 tsp seasoned salt, 2 tsp paprika, 1/2 tsp rosemary or sage & 1/2 tsp. black pepper.

Playgroup Granola Bars

Followed recipe exactly, just doubled it. It was so good. A little too sweet for my taste, so I am going to reduce the brown sugar next time. I over cooked it, so next time will check it at 20 min. to see if the edges are starting to get golden brown. It didn't look like I over cooked it, but after bars cooked down, they were too hard on the edges. Thanks for this great recipe that can easily be modified with different flavors. :-)

So yummy! I replaced the oil with coconut oil, cut brown sugar to 1/4 cup, and my husband could not find wheat germ and oat bran at the grocery, so we went without. It was great! Thank you for this delicious recipe!

Grilled Salmon I

Delicious! I marinated for over 24 hours. I baked in oven at 425 degrees for 20-25 min. I also heated the remaining marinade in a small saucepan, along with a little flour, and added the thickened sauce to the top of the salmon about 5 min before finished cooking. Thanks for a great recipe!

Mom's Best Pork Chops

Very good. I used crushed Town House crackers and just seasoned them with garlic and onion powders to my liking. I even added a little seasoned salt. I put 2 T butter in a skillet and melted it before I put the breaded pork chops in it for a few minutes on each side. Baked on small cookie sheet and they were yummy. Thanks for the recipe!

Ooey Gooey Breakfast Rolls

I have been making this recipe for years. Only difference is that I use a large box of vanilla cook & serve pudding in place of the butterscotch pudding. This is so easy, and so yummy! Glad to find it on here to easily refer friends to this site for the recipe. Thanks!
