About this Cook
I am a stay-at-home mom of two small children. I have been married 9 years and enjoy wowing my family and friends with a good meal/dessert.
My favorite things to cook
I love to bake. However, since I had 2 kids and turned 30, I am not quite as skinny as I used to be. Now I usually bake things for my husband and kids to enjoy, and leave very little for me to enjoy. However, if it is really good, I usually end up sneaking some that I packaged up in the freezer for my husband's snacks that he takes to work.
My favorite family cooking traditions
Christmas dinner. My family used to take turns for different holiday meals. One aunt would have 4th of July, another Thanksgiving, and my family always had Christmas dinner. Since all of the cousins are married, moved away and or had families of our own, we tend to celebrate our meals with our immediate family. Now my parents come to our house for Christmas dinner, and I enjoy preparing it for my mom, as she did for so many years for all of us. She helps out some, but her biggest help is just playing with the kids while I enjoy preparing the meal.
My cooking triumphs
Preparing a big meal for New Years Day for both my parents and my in-laws, and having everything timed out perfectly to be put on the table nice and hot.
My cooking tragedies
I got a bread machine as a reward from work one year, and I only ever tried once to make a loaf of bread. It was honey wheat bread and it came out like a square, and it was so rediculously dense, that I have never attempted to make bread again (machine or no machine), that is other than the breakfast breads like banana nut, etc..

Slow Cooker Pulled Pork
So good! I did not do pork tenderloin, but had an almost 5 lb cut that was 6 grams fat/serving, which was in between the tenderloin and shoulder butt. It was on sale for about $10. I cut some onion and laid in on the bottom of the slow cooker bag. Then put the pork on top and sprinkled with garlic powder, onion powder, pepper and seasoned salt, then covered the entire thing with root beer. Flipped 3.5 hrs later and then about an hr before eatting, I drained bag and put in a new one. I skimmed off the fat and then shredded and covered with Sweet Baby Rays bbq sauce. Also added more seasoned salt, pepper and onion powder to taste. 5+ stars!!! Made enough for 15+ sandwiches.

Cinnamon Coffee Cake II
This cake is amazing! Per other reviewers, I did change the oil to 1/2 c oil, 1/2 c unsweetened applesauce. I also used 1 box vanilla and 1 box cheesecake pudding. I replaced the walnuts with chopped pecans. Because the pieces are smaller, my kids don't mind it that way. Husband gave 10 stars (out of 5)! So unbelievably easy that this is going to be my go to coffee cake recipe from now on. I made 2. One in a bundt pan. Start with a sprinkling of cinnamon, and then did batter, cinnamon mix, batter, cinnamon mix and finished with batter. Turned out beautifully. Also made one at the same time in a 9x13. I thought I had done about 1/2 batter 1st, but after putting 1/2 cinnamon mix and the rest of batter, I could just barely cover the cinnamon mixture. I thought this cake was ruined, but the cinnamon mixture did sink quite a bit, so the one on top of the cake was not too close to the other, and it was great. Thanks for this amazing recipe!

Caramel Snack Mix
I wasn't crazy about this for some reason, but others liked it at the party I went to, so giving 4 stars. I followed the recipe except put in 2 cups mixed (salted) nuts, in place of the other 2 cups of nuts. Very easy to make. I used a disposable roasting pan from Walmart (around $2.50), and saved on any hassle of cleanup. Also spread out on parchment paper after cooking so it didn't stick together.
