Mom's Zucchini Bread
This bread is super dense and cinnamony which I like, but I agree with other reviewers that it definitely needs more grated zucchini. I also substituted coconut oil and will probably continue to do so in future as it is a healthier oil that meshes well with the other flavors in the bread.

Indian-Style Rice with Cashews, Raisins and Turmeric
Really good and a nice change from ordinary rice. I served this with Tandoori Chicken Thighs. I would only make with Indian/Middle Eastern food though as the spice profile probably wouldn't match well with mutch else.

Fabulous Zucchini Grinders
Very good for a vegetarian sandwich. I did use an extra zucchini to bulk up the filling. Next time, I will consider substituting parmesan for half the mozarella to give a little more flavor. I also used the tip from another reviewer to place some of the cheese in the roll first so it doesn't get too soggy.
