Garden Gazpacho Salad

Quick and delicious, very light and refreshing for summertime. I did not use chicken this time, and it was great without it. The only change I made was that I didn't have the spicy V8 juice and subbed regular and added a bit of crushed red pepper for the bite. I think it's also a great recipe you could play around with. Fresh grated parmesan would have been nice.

Chocolate Mint Cookies I

These were deelish and super-easy!! I didn't change a thing, but bear in mind that you will need more than one box of Andes candy if that's what you use. I think I got about six or seven dozen cookies out of this recipe. We decorated ours with colored sugars and sprinkles for Christmas!

Carol's Chicken Salad

I was a little hesitant to try this because I'm not a big fan of fruit in my chicken salad; but at a friend's insistence, I decided to give it a try. I'm glad I did!! I enjoyed the combination of flavors. I made no changes, but I do think I'll reduce the amount of poultry seasoning just a touch the next time I make it, which is merely a personal preference. Thanks for the delicious and unique recipe!

Banana Banana Bread

I thought this was really good banana bread, as did my family. I liked the use of the brown sugar. I did substitute 1/2 cup flour with 1/2 cup oatmeal per another reviewer's suggestion, which I also liked. I would definitely make this again and add pecans next time. Thanks for the recipe!

Shrimp Lemon Pepper Linguini

This was really good and so simple to prepare! My family enjoyed it very much, and I have a 15-yr-old and four-year-old. The only changes I made were to double the sauce ingredients except for the butter, used 16 oz. of linguine, and a pound and a half of shrimp. Otherwise, I followed it to a T. Thanks so much for the wonderful recipe. We will definitely be making it again!!

Pork Tenderloin alla Napoli

This recipe was EXCELLENT and super simple!! I probably would never have tried it b/c I'm not a big fan of the green olive. A friend tried it and raved about it, so I gave in. So glad I did. I didn't change a thing, but I will double the sauce next time b/c I served it this evening with angel hair pasta and would have just enjoyed having more of it. My kids are ages three and 14, and they liked it, too, which is saying quite a bit! It's oftentimes quite difficult pleasing both of them. Thanks for the terrific recipe!

Poor Man's Caviar

Really good and easy! The kids, ages 14 and 3, wouldn't eat it, but they're super-picky anyway. I had this at a pool party a few weeks ago and couldn't wait to make it myself. I didn't change a thing other than adding a dash of salt and pepper. Served it with tortilla chips. Thanks for the tasty and nutritious recipe!
