Mock Tuna Salad

Amazing! I am not a vegetarian, but I love chick peas and this recipe intrigued me. I will definitely make again. My kids liked it as well. I substituted a 1/2 tsp. dry mustard for the spicy brown mustard and used a small white onion in place of the green onions. I also added two hard boiled eggs and some diced celery. Delicious! Thanks for sharing!

Three Bean Salad

Yummy! The only things I changed were adding garbanzo beans instead of wax beans because I had them on hand and adding a can of drained artichoke hearts. The marinade is delicious! Not too sweet or too tangy! Thanks for posting!

Mock Strawberry Jam

Yah! Another delicious way to use excess zucchini from my garden. I followed the advice of a former reviewer and added a 1/2 box of sure-jell and pureed the cooked mixture a bit before pouring it into the jars to seal. I also added 1 T. of butter when I added the Jell-O and lemon juice to reduce the amount of foam. Can't wait to try other flavors...deliciously sweet! Will definitely make this again for my family and for gifts!

Banana Pudding Cake

This recipe is delicious! I have made it several times. It's great as it's written, but it's fun to change up a bit too. I've added orange juice in place of water and applesauce in place of the oil to make it lighter. I've made it with different glazes as well. I've done a chocolate glaze that tasted delicious with the banana. I've also just sprinkled plain powdered sugar on top in a pinch. Great recipe!

Crab and Swiss Quiche

This recipe is fabulous! I made just a couple changes... I used part-skim mozzerella instead of swiss and added some dill for flavor. Instead of using a regular pie crust, I used layers of phyllo dough to cut some fat and calories. It turned out delicious! Will definitely make again!

Chai Tea Mix

This is awesome! It makes a large batch...great for a gift, but I used most of it for myself! I followed the recipe exactly, but used cardamon seeds that I ground on my own. Next time I will use ground cardamon from the store because it left a funky residue in the bottom of the mug...other than that, FANTASTIC! Thank for the recipe!

Morning Glory Muffins

Excellent! I used 2 cups flour and 1/2 cup oatmeal and some wheat germ for variety. Other than that, I followed the recipe exactly as posted and they were moist and delicious! Very good and pretty healthy too!

Health Nut Blueberry Muffins

These muffins are delicious! I couldn't find oat bran, so I doubled the oats and "made" buttermilk by adding a tablespoon of lemon juice to a cup of milk. Everyone in my family raved about these! I made a triple batch the second time around and they froze well. This will be a staple for us!

Honey Curried Chicken

This recipe is awesome! I followed the recipe exactly, but omitted the mushrooms because I didn't have any. It looks pretty and tastes great. After we finished eating, my husband put more chicken out to thaw so we could have it the next night! I think I will pair it with baked sweet potatoes. It will pair well wit the sweetness.

Crustless Spinach Quiche

Excellent recipe! Easy and delicious! I would maybe next time try a phyllo dough crust... not a heavy pie crust, but something to give it a little more crunch. Will definitely make again!

Cabbage Roll Casserole

This recipe is super simple and easy to make! It makes 12 large servings. I changed the amount of ground beef to 1 1/4 lbs, because that's all I had and I still filled a 9X13 to the top! I will half the recipe next time. Delicious though!

Cinnamon Carrot Bread

Great! I will definitely be making these again. In an effort to make them healthier, I substituted Splenda for the sugar (left the brown sugar the same...) and unsweetened applesauce for the oil. These turned out moist and delicious. I have to hide the pan from my 17 month old because she could eat 3 in one setting!

Candy Cane Fudge

I took these to a cookie exchange and everyone enjoyed them. They taste great. I would definitely swirl the food coloring in next time so mine would look more like the photo. I just added it in and it just made "pink fudge". Tasted great, looked so/so.

Slow Cooker Root Vegetable Tagine

I took the suggestions of other reviewers and added more broth (chicken) and doubled the fruit and spices. Everything else remained the same. I usually love morroccan food and flavor, but this didn't take; It still seemed bland and unappetizing. No suggestions for improvement, I won't be making this one again.

Paul's Pumpkin Bars

This recipe was delicious! I am watching my weight, so I made it lighter by using 1 cup unsweetened applesauce in place of the oil. Stayed just as moist and really cut the fat. I also used lowfat cream cheese for the frosting and left out the butter. It made the frosting a little runnier, but it set up okay. I also added a little orange zest to the frosting. Took these to a party and everyone loved them...no one missed the fat and calories!

It's Chili by George!!

This chili recipe is no-fail. So simple and so yummy. I made 6 batches for frito pies at my daughter's one year birthday party. It froze well and I was asked for the recipe all night! I used ground turkey for some of the batches...still delicious!

P.J.'s Fresh Corn Salad

Excellent Recipe! I didn't have zucchinni on hand, so I doubled up on the cucumber. I also boiled the corn a few minutes before adding to the salad. I used the spray light italian dressing, and it was delicious! A great way to use many of the vegetables I get from our farmer's co op.
