The Best Rolled Sugar Cookies

Made these for St. Patrick's Day using shamrock cookie cutters. I found the dough to be very easy to work with, and the cookies were delicious and just the right texture. They were a big hit with the kids!

Mediterranean Fish Soup

I love the combination of flavors in this soup- it's so bright and cheery. I make it on the stove, and it's ready in under an hour. For a little extra heartiness, I add a can of artichoke hearts if I have them on hand.

Baked Flan

This was the first time I ever made flan, and I was delighted with the way this turned out. It looked so pretty on the platter when I turned it out, and the texture was so lovely and velvety smooth. I think I could have eaten the whole thing by myself, but my mama taught me to share :)

Butter Bean Burgers

I gave this 4 stars because they were really tasty. After reading a lot of reviews, I added an extra egg and almost doubled the amount of crumbs, but they still fell apart when I cooked them and were very greasy. I found a solution though. I tried microwaving them individually on a plate that I had sprayed with non-stick cooking spray. This firmed them up enough to transfer to a LIGHTLY oiled skillet and quickly brown both sides. Using an ice cream scoop to measure out the mixture and flattening it out gave me perfect, bun-sized patties. Thanks, Silverwolf, for a great recipe!

Irish Brown Soda Bread

This is by far the best Irish soda bread recipe I've tried. I've tried it with buttermilk, soured milk, and regular milk, and it turns out well with each. I do add about a half tablespoon of sugar to the dough to bring out the flavors more, but it's good the way the recipe is written also.

Fabulous! Just like grandma used to make. It's even fluffier if you let the gelatin thicken a bit in the refrigerator and then whip it until it's foamy before adding everything else.

Almond Custard Filling

Fabulous and so easy! I filled a white cake with this and added an almond flavored white frosting, sprinkled with some slivered almonds. I'll definitely use this recipe again!
