Low-Fat Blueberry Bran Muffins

my bluberries had gone bad, so i just added cinnamon to the recipe and sprinkled cinnamon-sugar on top. delicious! i want to try it with cranberries, possibly dried.

Chuck's Favorite Mac and Cheese

delicious and surprisingly easy! i added some half and half and threw in some garlic salt, paprika and onion flakes, and used seasoned bread crumbs. made it in the middle of the day for lunch - it was a nice treat!

Insanely Easy Vegetarian Chili

if there were more stars, i'd give them to this recipe. i halved it and didn't use the celery (didn't have any), used a green bell pepper and black beans instead of red and pinto, and put in a can of tomato sauce instead of the canned tomatoes. and added some cilantro. this was super easy and so, so, so good!!! (serve it with the "homesteader cornbread" recipe from this site, which is also amazing)

Red Bean Salad with Feta and Peppers

this was totally delicious. i doubled it and used a can each of chickpeas and kidney beans, a yellow pepper, and a red onion. and both parsley and cilantro (it would have been better if they had been fresh, but my dried spices were fine). very filling!

Salsa II

oh my god, so easy and so good!! i added about a quarter of a cup of sugar, to give it a little sweetness, and added a can of corn and some chopped-up peppers from my girlfriend's garden. i think i needed to add more spiceyness to the tomatoes mixture, though - the heat was a little uneven.

so tastey and so easy! i refrigerated and that helped with them syaing together; i also made them into slightly smaller patties, so i got more. next time i'm definitely adding some corn, though.

Butter Bean Burgers

these were delicious!! they have a great taste and texture. i added diced green peppers and dipped them in cornmeal, like others suggested. i froze them, too, since i live alone, and they seemed to heat up just fine if i put them in the toaster and then in the microwave (although a toaster oven would have been ideal).
