Banana Pancakes I

I added a little vinegar to the milk to make buttermilk, and added spices (cinnamon, nutmeg) to the flour mixture. The banana flavor is just right, unlike many other banana recipes that are too weak. This is a great simple recipe!

Honey-Peanut Butter Cookies

These are excellent! I substituted whole wheat flour and brown sugar for the plain flour and white sugar, and I added an extra egg as suggested by another reviewer. Turned out perfect. Best eaten fresh out of the oven with a tall glass of cold milk!

Chicken Pot Pie IX

Lemon Sponge Pudding

Perfect! This was a great light dessert after a grilled salmon dinner. I put this in the oven just as we started dinner, and it was ready when we were ready for dessert. As other reviewers have noted, the proportions were just right. The crispy meringue on top, the spongy cake in the middle, and the lemon pudding on the bottom was heavenly. Thank you!

Grilled Lamb with Brown Sugar Glaze

I used a 2.5 lb leg of lamb, cubed; didn't have tarragon so I used basil and thyme, and it worked wonderfully. Served with brown rice and caramelized onion, with a side of tabbouleh. Great!

Mama's Italian Wedding Soup

I used homemade broth and browned the meatballs before adding the liquid. For the meatballs, I left out the parmesan with no ill effects; added garlic powder, oregano, a dash of black pepper, and was generous with the basil. I made breadcrumbs from a slice of bread. Excellent!

Banana Nut Bread II

It turned out great! I only had one large ripe banana, but the bread had enough flavor from it. I used 1 C all-purpose flour and 1.5 C whole wheat flour; the bread still turned out moist. Used the "Batter Breads" setting on my Breadman and added about 1/3 C mildly sweet chocolate chips when it was mixing. Husband called this a win.

Irish Soda Bread

Very moist bread - tasty! I cut down on the raisins just a little to 2 1/4 cups, and it was plenty. For those who are not a fan of caraway seeds, at the full recipe amount of 1 Tbs the flavor was still very mild.

Hearty Turkey Soup with Parsley Dumplings

I will probably omit the milk/flour addition to the soup in the future. Instead of chicken bouillon, I used 4 cups of chicken stock (replaced some of the water) and added a sprinkle of salt. Added dill to the dumpling dough. Tasty!
