Gerry's Chicken Enchiladas

Thanks for a wonderful recipe, Gerry. I am always looking for ways to economize, so I used chicken thighs (saved over $2) and boiled them for the broth so that I didn't need to purchase chicken broth. Otherwise, I followed the recipe exactly, and they came out just wonderful. I did not add the chile peppers, and for me the "heat" was just right, but I like mild. My family loved this dish.

Cajun Style Meatloaf

I was a little disappointed in this recipe. It was good but not as good to me as I had expected from the reviews. It is an expensive dish by the time you buy the beef and the sausage, and to me, it just wasn't worth the extra expense.

Deep Dish Layered Salad

Great salad! I substituted FF sour cream for the mayo with excellent results. I forgot to put on the parmesan, and knew immediately after I tasted it that something was missing. The salty parmesan is necessary to balance the sweet dressing on this salad. The dressing with the FF sour cream would also make an excellent party dip.

Garlic Grits

Very good recipe. The grits was very creamy with just a hint of garlic....just right to me. If you like a stronger garlic flavor, you will want to increase the amount. Being from the South, however, and having cooked grits many times, I can tell you that the grits will be less lumpy if you put them into the water before you bring it to a boil.

Apple Gouda Quesadillas

This is a wonderful lite meal. I think I will probably add a few more green onions next time. I used smoked gouda and it was wonderful. This recipe is a definite keeper!

Hot Dog Noodle Casserole

My family and I really enjoyed this recipe! We all love hot dogs, and this was such a great way to serve them. I prepared the recipe just as it is written, and I would not change a thing! I will definitely use again.

Foreign Devil Fried Rice

This is a terrific recipe! It takes a trip to the Asian market to get some of the ingredients, but the flavor they add are worth the trouble. I added chicken to the recipe and plan to make it again with shrimp. The quantities that I had to buy the Asian ingredients in will make the recipe at least two, maybe three, more times. All in all, it is a very economical meal. The amount of garlic looked like too much to me, so I just did 2 1/2 tbsp., but I'm sure it would have been fine with 4. The fresh ginger tastes so good in this recipe. Leftovers are just as good as fresh! I want to use this for company sometime, and have all the chopping done early and throw it together when they arrive. This is a definite keeper.
