Southwestern Egg Rolls

If you haven't tried these you are missing out. Everyone who has tried them has loved them. Another reviewer suggested eating them with Amy's Cilantro Sauce from this website. Great idea, I am eternally grateful! 5/29/12- Tonight I baked these at 450 for 15 minutes like another reviewer suggested. They were awesome! No freezing required.

Amy's Cilantro Cream Sauce

New. Favorite. 2/6/11 - Added about a 1/4 cup of mayo to get a creamier texture. Family loved it for superbowl. I couldn't get enough.

Chicken Stir-Fry

Great recipe. I stir fried the chicken with some crushed red pepper and asian seasoning. I had a bag of stir fry vegies from the store so I stir fried those with a whole chopped yellow onion. At the end I only used 1/2 cup water but added a couple tablespoons of soy sauce, a tsp of chopped garlic and a 1/2 tbl of peanut oil. Yum!

Baked Potato Soup

12/2/10 Really good. Used a pinch of thyme and a pinch of basil. Did not add hot sauce but had it out for others to put into their soup. Also, we did not put cheese on the top but instead some parsley flakes and crumbled bacon.

Cheesecake Bars

Tastes pretty good. Doubled the recipe and baked in a 13 x 9 pan. Don't love the walnut flavor but don't hate it either. Hubby does not like the walnuts. Next time I will double the filling. 10/20/11 Came up with a pumpkin version that is AMAZING!

Cranberry Orange Cookies

10/5/10 Fabulous, just the way they are. I zested two oranges to get enough orange zest for the recipe and the juice from both of them was enough for the recipe. Followed the recipe exactly. I also tried baking them at 300 to ensure they kept their shape but it took to long, about 25 minutes, and was unecessary.

Strawberry Freezer Jam

Turned out a little runny but I am sure that is my fault since this is the first time I have canned jam. I actually processed this in a hot water bath to make it shelf stable since my freezer gets really full this time of year. I also substituted lime juice for the lemon, only because I ran out of lemon and let me tell you, that was an amazing substituition. I will from now on use lime juice in my strawberry jam.

Waffles I

Well, I was out of vegetable oil and vanilla which is weird for me so I substituted a 1/2 cup of melted butter flavor shortening and a 1/4 tsp of almond extract and a few dashes of cinnamon and these were fantastic! This will be the waffle recipe I use from now on. My husband bought me a regular waffle maker for Christmas last year when I wanted a belgium waffle maker but this recipe makes up for the difference! Big, fluffy, crispy waffles!

Jay's Signature Pizza Crust

8/30/10 Pretty good crust recipe. Will try 1/3 whole wheat flour next time. Good tip is to let the pizza dough rise on the pan for 10 - 15 minutes before cooking. Also tastes good with a couple tablespoons of garlic and some italian seasoning. 12/31/10 Heat the pizza stones up before making the pizzas. This creates a delicious crust. Also I still love adding chopped garlic and italian seasonings to the dough although this time I was out of italian seasoning so I used basil and oregano. Yum!

The Best Chicken Fried Steak

Was good for when you want an old style meal. Definitely season the meat with salt, pepper and garlic powder before dredging in the flour. I would also add some cayenne or white pepper to the egg mixture but overall a good recipe.

Peach-a-Berry Pie

I would have given this pie 5 stars for flavor but it was VERY runny. It still tasted great but next time I will make sure to drain the fruit and use 1 Tbl of cornstarch along with the flour. I will also add a 1/4 tsp of nutmeg. I did not make a double crust pie. I made a struesel topping using 1/3 cup flour, 1/3 cup brown sugar, 1/2 tsp cinnamon and a 1/2 stick of butter mixed together and sprinkled on top.

Zesty Slow Cooker Chicken Barbecue

All I can say is YUM! So easy! I used Bullseye Hickory BBQ sauce and I left out the worcestershire sauce, just because I was out but it was so delicious! I served on buns with coleslaw. My husband is a bird hunter and we will be trying this with duck or goose in the fall!

Rosemary Ranch Chicken Kabobs

I used a packet of ranch dressing mix instead of ranch dressing and splenda instead of sugar. I liked the splenda but the ranch was to much. Next time I will use half the packet of ranch dressing mix and will try marinating for 1/2 an hour. It was really delicious though and a favorite of my soon to be husbands. We ate it with steamed broccoli mixed with roasted red peppers.
