Pumpkin Cheesecake in a Gingersnap Crust

I made this into a bar recipe because I don't have a springform pan. It was amazing. I used a different crust recipe but still this was great!

Beef Bulgogi

We loved this recipe! I used petite sirloin steaks sliced very thin because that is what I had on hand. I sliced the meat before I marinated it. Also, I did not have green onions so I used about 3 tbl of dehydrated onions. Served with white rice and a quick vegetable stir fry: broccoli, onions and red peppers with a little veggie oil, a little sesame oil and a little soy sauce. Yum!

Ham with Honey and Brown Sugar Glaze

This is my favorite glaze recipe! I didn't use the cloves and I didn't have oranges so I just used some orange juice. I bought a ham for $1.50/ lb and sliced it and glazed it myself. I am pretty sure I saved about $30.00

Coconut Macaroons III

These are pretty good. I used a chipped coconut I find in a health food store in WA. Make sure you spray the parchment with non-stick spray, otherwise your macaroons will stick to the paper which makes it very hard to remove. I will make these again.

Banana Oat Muffins

Yum! I used 2 whole bananas, 1 cup flour and 1/2 cup whole wheat flour as well as a whole tsp of vanilla. I also had to add an additional 1/2 cup of oatmeal because it was so runny and a tsp of cinnamon.

Loved it! I used a can of ranch beans because I didn't have a can of baked beans. I also added about a 1/4 cup of Rockin Rudys BBQ sauce. Sorry everyone, only available in Idaho!

Sweet Restaurant Slaw

Yay! So good. I haven't found a coleslaw recipe I liked until this one. It was pretty sweet so next time I think I will reduce the sugar a little and add a little more vinegar but really, so good.

Figs Oozing with Goat Cheese

Sweet and Spicy Pork and Napa Cabbage Stir-Fry with Spicy Noodles

This was pretty good. My husband loved it which is rare with stir fry so that was good. I made a lot of substitutions but only because I did not have all of this on hand. I used ramen noodles, no seasoning; shrimp, snow peas, mushrooms and in addition to the garlic powder, one clove of garlic.

English Muffins

I rolled this out and cooked half in the oven and half on the stove in my cast iron pan. The ones in the oven turned out fine but had no color so I browned them quickly in the cast iron pan. Either way was fine. I rolled the dough a little to thin though. I think next time I would roll it out 1/2 inch to 3/4 inch. Overall they tasted fine.

Pumpkin Cake III

substituted 1/2 cup oil with unsweetened applesauce and 1 cup of flour with whole wheat flour simply because I was almost out of both but it worked and tasted delicious. Next time I will use egg whites and see what happens.

Seven Layer Taco Dip

Great recipe. I will use again. Here are the changes I made: Use two can's of beans but only one packet of taco seasoning, halve the cream cheese/sour cream mixture, leave out lettuce and green peppers. Yum!
