My husband & I live on a small farm. We keep horses, dogs, cats & chickens. I try to keep a garden every year. I love the fresh eggs and vegetables.
My favorite things to cook
The only thing I don't care to cook is fish & sea food, only because I don't eat them. Fajitas are my favorite. Spaghetti/lasagna is my husbands.

Master Pizza Dough
Excellent pizza crust. I followed the recipe exactly and I could not have done better. I was extremely pleased and will use this recipe again.

Chef John's Italian Meatballs
This was my first time ever making meatballs. I thought they were a bit of a pain and did not add anything to a recipe. But my husband specifically asked for meatballs with his spaghetti so I decided to try this one since it did not call for them to be cooked twice like every other meatball recipe I have ever read. I could not be happier than if I had not had to make them at all! This recipe was super easy and super tasty! These were as easy as making meat loaf and tasted better! I cut the recipe in half for just the two of us and put the full recipe amount of the herbs as my husband likes things spicy. Even the red pepper flakes. They were not too hot even for me and I cannot tolerate a lot of hot. I would cut them in half for children though. I was worried about the salt because I don't care for a lot of salt but I left it alone this first time except for cutting it in half thinking if it was too salty I would cut it next time. It was just right. We both loved this recipe. If you try only one meatball recipe make it this one you will not be sorry! Thank you Chef John for sharing this super good and super easy meatball recipe!

It's Chili by George!!
This has become my Go To base for chili. Of course I always make small changes as I go based on what I have on hand and I have learned that 1/4 cup of chili powder is definitely too much for us. We like about a small non heaping Tbsp of chili powder. I also use diced petite tomatoes and one can of Rotel © to make up the tomato juice because we prefer a thick chili with small prices of tomato throughout. But if you adjust for heat preference and tomato type preference you cannot go wrong with this as your base. I like to add a small shake of cinnamon and a tsp of cocoa at the end of cooking to finish it. My husband adds a splash of vinegar to his bowl and my granddaughter likes sour cream added so you can use this in multiple ways. I also use beans because we like beans in our chili. I prefer one can of chili beans and one can of kidney beans myself and will sometimes add Bushes baked beans in different types depending on what I have in the cabinet. This recipe really is the perfect base for chili & I can always find it due to my dad's name being George! Lol. Thank you George for writing down the perfect base for me to have awesome chili whenever I feel like it!
