Will's Spicy New Orleans Catfish Fries

With only three ingredients to embelish the fish, it's difficult to award stars, or think of it as a recipe. It is, however, very good. To people who can't find corn flour in the store, grind cornmeal (white or yellow) in your food processor or blender until it's the consistency of flour.

Pan Fried Spinach

Too darn greasy!!!!! It might be acceptable if you use only enough bacon fat to coat the pan, and skip the butter and oil.

Kay's Spaghetti and Lasagna Sauce

A truly good recipe, made even better if prepared in the slow-cooker. Instead of sugar, I use the advice an elderly Italian lady gave to me many years ago -- to add a generous spoonful of grape jam. You'll never be able to detect it, but it makes a wonderful difference.

Savory Sausage and Rice Skillet

Instead of using rice, I used peeled, chunked potatoes and reduced the broth to only about 1 cup. I also added two diced tomatoes. With hot Italian bread, it was delicious!

Chocolate Oatmeal Cake

Pumpkin Cake I

This cake recipe is perfect as submitted, and requires no changes at all! To the lady who wondered why Allspice was included. Allspice is not a mixture of spices as she mistakenly believes but is, instead, a spice of its own -- often used in Jamaican cooking. I always add a generous dash of it to pumpkin pie, in spite of all of the other spices. Its addition provides an extra bit of verve.

Basil Buttered Beans

I didn't have fresh basil, so I used dried -- 1/2 tsp. I also added 1-1/2 tsps. fresh, finely minced parsley. Delicious. Like another viewer, I found that 7 minutes was exactly right.

Tuscan Soup

Delicious! I increased the number of sausages, browned them whole, and sliced them before adding to the soup. With hot Italian bread, it's a meal.

Fantastic Lemon Butter Fillet

This is quite delicious as long as the amounts of salt and pepper are reduced, but I think most of us are automatically inclined to always check for seasonings. I added a spoonful of mayonnaise and a bit of dill, as several others did, and found it delicious; a good way to cook fish or large sea scallops. I'm sorry for the lady whose husband threw it in the garbage can.

Italian Spaghetti Sauce with Meatballs

This truly is delicious although, since my ground beef wasn't terribly lean, I browned the meatballs a bit before adding them to the sauce (after draining the fat). My thanks to the person who gave us this recipe; it's great, and makes a delicious spaghetti supper! Also, using small zip-loc bags, I put a bit of sauce and three meatballs in each to use in the future for meatball-subs on Hoagie rolls. Wonderful to have in the freezer.

Bacon Chicken II

When the submitter suggested serving this with macaroni and cheese and tater tots or French fries, I knew it would be best to skip it. I tried it anyway, though, and I was right in the first place. The addition of the flavorful bacon is a good idea, but DEFinitely cook the bacon first. The cooking time was most assuredly inadequate. Best not to use this recipe, unless substantially modified. And then you'd have an entirely different recipe, wouldn't you.
