Baked Haddock

Excellent with a few slight modifications! I dipped the haddock into 1/2 cup milk mixed with 1 egg, mixed the salt into the breadcrumb (panko) mixture, added 1 tsp garlic powder, and used olive oil instead of butter for the drizzle. Baked at 350 for about 20 minutes on a foil-lined baking sheet with metal rack insert. Came out FANTASTIC! My family loved it (kids included)! Can't wait to make it again!!

Delicious Avocado Egg Salad

This was OK. I liked the idea of using avocado and mustard in place of mayo, but honestly I missed the mayo! The eggs and avocado together were good, but I didn't care for the mustard flavor (even reduced to 1 TBSP, as suggested by another reviewer). Might try it with a TBSP of mayo next time...still less than I would normally use. 1/4 tsp. of salt, 1/8 tsp. of pepper and 1/8 tsp. of garlic powder were quite enough for me.

Fluffy Pancakes

Excellent! "Sour" milk works great in a pinch. I use buttermilk powder, which keeps a lot longer in the fridge than liquid buttermilk. Add a little vanilla extract and cinnamon and this recipe is perfect!!

Cola Pork Chops

Didn't love these. They were just OK. Seasoned chops with salt/pepper and browned in olive oil before baking. Followed other reviewers and added worcestershire sauce and garlic powder to cola mixture, and cut ketchup down to 1/2 cup and brown sugar down to 2 TBSP. Baked for 45 mins. but even that was too long. 30 mins. would have been fine. Flavor was good, but not great. Family ate it, but no rave reviews. Sorry.

Slow Cooker Chicken and Dumplings

YUM!!! Just a few minor adjustments...sprinkled the chicken with poultry seasoning, used low-sodium chicken broth instead of water, added frozen peas, carrots, corn and only one package of biscuits one hour, instead of 30 minutes, before serving. Was a bit runny, so I will reduce the broth next time, but otherwise excellent!! My family, including 3 picky kids, inhaled it! A definite keeper!

Taco Seasoning I

The supermarket left my taco seasoning packet out of the bag and I didn't realize it until the meat was already browning. I found this recipe here last minute and my taco dinner was saved! I left out the red pepper flakes to keep it mild and it was still delicious! One ounce wasn't quite enough for one pound of ground beef, so I will make a little more next time. I will never buy a packet again!!

Grilled Brown Sugar Pork Chops

Juicy grilled pork chops? I didn't think it was possible! My husband always overcooks them, but with this recipe they were moist, sweet, JUICY and delicious! I only made one adjustment....didn't have apple juice so I substituted apple cider vinegar (as another suggested...great meat tenderizer!). I marinated the pork for 1 hour in half of the sauce and used the rest for dipping. Excellent!!!!

Chocolate Covered Strawberries

These were so easy to make and SO good! I used both white and milk choc. chips. I dipped the berries in the white first, then in the milk leaving a border of white at the top....looked so nice! I also dipped some in milk choc. and then drizzled the white over them....what a presentation...many compliments! I had a TON of chocolate left over, so next time I will use 8 oz. of chips/1 TBSP shortening for 1 lb. of berries. Thanks to the reviewer who suggested using a pyrex bowl to make a double boiler...worked great! Wonderful recipe!!

Strawberry/Rhubarb Crumb Pie

This was my first ever Strawberry Rhubarb Pie and it was DELICIOUS!! This recipe is perfect. I followed it almost exactly...just added a tsp. of cornstarch and 1/4 tsp. of cinnamon as others suggested, and baked it for an additional 10 minutes. Excellent with vanilla ice cream and/or whipped cream. YUM!!! I'll be making this again and again! Thanks Paula!

Absolutely delicious!! I typically don't like carrot cake, but my husband loves it, so I decided to make one to take to our family Easter gathering. Everyone RAVED about it!! What I love is this is not spicy, like other carrot cakes I've tried. It's more sweet, but not too sweet...and very moist! I omitted the coconut and walnuts (don't like them), but aside from that I followed the recipe exactly. The Cream Cheese Frosting II from this site made this cake simply amazing!!! We ate every last crumb!!!

Chicken Pot Pie IX

Excellent recipe!! I never thought to boil raw chicken, never mind in chicken broth, but what a great idea...eliminates a step and one less pan to clean. I used potatoes instead of celery and made a little extra sauce, and this was delicious. I may add corn next time. I'll throw all of my other pot pie recipes away now!!

Anniversary Chicken I

Soft Christmas Cookies

I didn't have great luck with this recipe. The dough was delicious and seemed to have a good consistency, but even with using TONS of flour, it kept sticking to my cookie cutters and the table. I took others advice and used 3 cups of flour and real butter to make the dough, but I can't figure out what kept going wrong. We ended up just making regular round cookies and decorating them with colored sugar and M & M's and they were yummy. I would have liked some cute cut-out cookies though!

Eggs Benedict

This was really good. This was my first time making Hollandaise sauce and it was very easy. I reduced the lemon juice to 2.5 TBSP, omitted the white pepper and increased the Worcestershire sauce to approx. 1/4 tsp. For the Benedict I used regular bacon (no Canadian on hand) and added a layer of tomato and avocado just to dress it up a little. It was yummy!

Chicken In Basil Cream

This chicken was DELICIOUS! It was also quick and easy...3 for 3!! The only change I made was omitting the pimentos (don't like). At the suggestions of others, I doubled the sauce and served it over basmati rice (instead of pasta, but will try that, too)....excellent! My only recommendation is to thicken the sauce either by reducing it or adding corn starch. Mine was a little loose. Aside from that...perfection!!!

I'm sorry, but I didn't care for this recipe. There just was nothing special about it and the taste was very flat, for lack of a better word. I followed the recipe exactly, but was disappointed with the results. I've found tons of amazing and delicious recipes on this site, but this wasn't one of them. Again, sorry.

Amazing Pork Tenderloin in the Slow Cooker

Love my slow cooker! This recipe was true to it's name...amazing! The pork was so flavorful and tender. The garlic was a bit much for my husband and kids (they scraped it off), but I loved it (might spread it on only half of the pork next time). The au jus was delicious as well. I strained it to make it a little more smooth and the flavor was awesome. Excellent recipe!
