Shrimp Dijonnaise

I followed the exact recipe for the marinade and then put the shrimp in the marinade and broiled it all together so I didn't have to discard all the yummy sauce. Then I tossed it with some whole grain pasta and it was soooooo good! Perhaps in the future I would reduce the amount of lemon juice, but I loved it even as lemony as it was!

Chicken with Roasted Red Peppers

I'm giving this recipe five stars because I think it would be heavenly if not for my mistake. Make sure you get roasted red peppers in water NOT in brine. Way to salty and vinegary for my taste when combined with the Italian dressing.

Quick Mediterranean Chicken

I followed the recipe almost exactly but I didn't have greek dressing so I used balsamic vinaigrette and added some feta cheese. I also added a can of white beans to add a little more fiber. Soooooo good.

Spiced Butternut Squash Soup

Loved this soup SO much, but I'm giving it four because of the time it took. Maybe it was because I never made it before. But honestly I will never be satisfied with another Butternut Squash Soup again.

Pesto Sauce

I made this for my cooking class project and served it on slices of french bread topped with a slice of tomato. SO GOOD! Everyone loved it, except my friends husband who doesn't like anything.
