Pumpkin Pancakes

The flavor of the pancakes was delicious, but the batter was a bit too thick for my taste. It was difficult to get them to cook through without burning them, even on low heat.

Apple Crisp II

Hubby said this is the best apple crisp he has ever had. I followed the recipe exactly using apples I had on hand. Next time I will probably seek out some really tart baking apples because it was a bit sweet for me. Delicious recipe, thank you!! :o)

Weekend Brunch Casserole

This was really good! I made it as written, except that I added some minced garlic to the egg mixture and used monterey jack instead of mozzarella. Yummy! It did take quite a bit longer to bake than the recipe stated, maybe 25 minutes or so? All around good.

Soda Cracker Pie

Really good! I made the recipe exactly as written, except I was a couple of saltines short. I substituted vanilla wafers for what I was missing. Easiest pie I have ever made, that's for sure! YUM!

Banana Sour Cream Bread

Very yummy banana bread! The recipe makes a huge batch and I love the idea of dusting the pans with cinnamon sugar. I probably won't make it very often because I tend to use lower fat recipes, but this was a great addition to my holiday baking.

Brown Sugar Meatloaf

SO good! I made this just as the recipe stated, only mine took quite a bit longer to cook. It tasted wonderful and leftovers made great sandwiches! Hubby said it was one of the top five meatloaves of all time, which says a lot. :o) Thanks!

Best Tuna Casserole

This was very yummy! I made the following changes according to our personal tastes: I omitted the mushrooms, used french fried onions instead of potato chips, and added a half a soup can of milk. Next time I make this, I will either omit the chopped onion in the casserole or cook it prior to stirring it in. It stayed crunchy, which I didn't really care for. Other than that, very good! :o)

Wildfire Pulled Pork Sandwiches

This was pretty good. I used Sweet Baby Ray's bbq sauce because that is what I had on hand. I also used onion instead of red pepper and added some apple vinegar to the mix prior to pouring it over the pork. The only real complaint I have is that it wasn't saucy enough for me, but that was easily remedied once the pork was shredded! :o) Thanks!

Griddle Style Philly Steak Sandwiches

These sandwiches were wonderful! I sauteed the meat and veggies in separate skillets for the sake of having enough space. I used some butter and minced garlic for the veggies and a tiny bit of olive oil for the meat because I had very lean roast beef from the deli. I also used pepper on both. I put my buns under the broiler for a minute to brown them before assembling the sandwiches. I used a little smear of mayo on them also. I have been looking for a yummy steak sandwich to make at home for some time and these were really tasty! My husband and two year old also loved them. Thank you!! :o)

Garlic Chicken

This chicken wasn't bad, but it wasn't my favorite either. It was a little bit bland and I thought the temperature was a bit high. I might add some garlic salt or something and cook it at 375 next time so it doesn't lose so much moisture. Thanks for sharing!

Easy Lasagna II

This was very easy and yummy! I had never made lasagna before, so I was really hoping it turned out. It tasted wonderful! I did add quite a bit of extra sauce. I made the recipe in two 8x8 pans and needed to use extra sauce once I made it to that top layer. :o)

Apple Hermits

I omitted the nuts and raisins because of my personal tastes and wish I would have thought to FINELY chop or even grate the apples. The bigger pieces in the cookies were kind of hard to manage when it came to shaping the dough. The cookies were SO moist once they were baked that they really should be eaten within a day or two. It's a yummy fall recipe!

Corn Dip II

This is one of my favorite dips and it always goes over well at parties. I omitted the cilantro, used sharp cheddar cheese, and used way more than a "pinch" of both the cayenne and salt. YUM!

Sweet, Sticky and Spicy Chicken

This is my favorite dish to make for dinner. It is absolutely freaking delicious!! I always omit the ginger (personal taste), add broccoli, and thicken it with a bit of cornstarch. YUM!!
