My favorite things to cook
I love easy cooking, especially soups and baked foods. I like to cook from scratch, but it's nice to let it finish cooking while I clean up or do something else.
My favorite family cooking traditions
Cooking for a small Italian army with my sisters & my mom (the greatest cook that ever lived!).
My cooking triumphs
Making my mom's Minestrone soup and having it turn out just like hers! No matter how big a pot I make, there's never a drop left.
My cooking tragedies
Never take your eyes off the stove!!!! Things tend to burn or catch on fire.

Easy Chicken Rice Casserole
Wonderful dish! I also added 1/2 cup extra milk, saute'd the chicken with a chopped onion, used one can cream of chicken and one can cream of mushroom soup, and threw in some peas & mushrooms. Topped it with cheese at the end. It was really good! Great basic recipe that can be jazzed up with whatever your family likes.

Potato Pancakes II
This is it! I've tried (and failed) many potato pancake recipes and this one is great! I just added a little Bisquick to the mix (approx 1/4 c.), and a sprinkle of garlic salt, and added margarine to pan in between batches, and they came out perfect and delicious!!! Thanks for submitting this recipe! I will never have to throw out leftover mashed potatoes again!

Chicken Fried Steak III
Came out great, except I omitted chili and cayenne, just added a little black pepper instead. Also didn't use flour in the egg mix, just dredged meat in flour, then egg, then flour again. My family really enjoyed it, EVEN my mother-in-law liked it!!!
