Super-Easy Rocky Road Fudge

Reviewed: Dec. 29, 2005
Very good and super easy to make (even with 2 little kids under-foot). One note, definitely let the chocolate mixture cool a bit before adding the marshmallows or else they will melt. Also, I used pecans (hubby does not like walnuts) and it turned out great - I imagine you could use any variety of nut or maybe even a combination of several and it would be wonderful.

Baked Ravioli

Reviewed: Dec. 15, 2005
Great, easy recipe although I cheated quite a bit! For the amount of ravioli listed in the recipe I used nearly two 28 ounce jars of organic store bought pasta sauce instead of making the sauce in the recipe. I also used 3 cups of a four cheese blend (including asiago, provolone, mozzarella and parmesan). I mixed the cooked ravioli with the sauce in a large bowl first before placing everything into the baking pan (I wanted the ravioli thoroughly coated with sauce). I poured half of the ravioli mixture into the baking pan and sprinkled on about 1 cup of cheese then topped with remaining ravioli and cheese. This recipe makes alot - I used a 15x10 inch pyrex baking pan. Great dish to serve on a cold winter day!

Grandma's Green Bean Casserole

Reviewed: Dec. 15, 2005
Made this for Thanksgiving dinner and it was a hit. I used steamed, fresh green beans instead of canned and I sauted the onions first before adding the other ingredients. I thought the sour cream was just a bit over-powering but still quite good. I will make it again next year!

Cream Filled Cupcakes

Reviewed: Nov. 13, 2005
Five stars for a great filling! I needed a cocoa filling to fill cupcakes for my son's birthday so I just changed 2 ingredients in this cream filling recipe and it turned out great! I used all butter (didn't have shortening) and I replaced 1/4 cup of the confectioner's sugar with unsweetened cocoa powder. I also filled my cupcakes from the top since I was going to frost them. By the way, I used a triple chocolate fudge cake mix for the cupcake and a vanilla buttercream for the frosting (my son's favorite). The cream filling recipe with the changes I made generously filled 24 cupcakes. Everyone loved the finished cupcakes - kids and adults!

Broccoli and Tortellini Salad

Reviewed: Nov. 13, 2005
I made this for a large party (double recipe) and everyone loved it! I did make a few changes based on what other reviewers said and my personal tastes. I used one third the amount of sugar suggested and I added some fresh ground pepper to the dressing. I also used all natural reduced fat mayo. I did not use a whole red onion (I had very large red onions) so I used approx. one cup finely chopped onion for the double recipe. Lastly, I tripled the dressing amount (only using 1/2 cup sugar total) which seemed perfect for the double recipe that I made. Leftovers are just as tasty the next day although it did seem to be a touch sweeter after sitting in the fridge for 24 hours. The combination of all the flavors was just so good! This is not your typical boring pasta salad and that's why it's so yummy. I will definitely make this again!
