Throw Together Mexican Casserole

I was stuck home today had a pound of ground beef that needed to be used so I decided to try this. I tweaked it and used ingredients that I had on hand I used rotini and I sub the salsa with canned tomatoes ready for chili, and I used chili beans in a mild sauce instead of the kidney beans. I omitted the taco sauce and used my own homemade taco seasoning and sub Tomatoe soup for the Tomatoe sauce. I also put in 2oz of cream cheese. I then put it all together and I put half in the casserole topped it with 6 American singles put the remaining meat mixture on top sprinkled with a little cheddar and baked as directed. I put it on a plate and topped it with lettuce ,tomato ,sour cream and crushed Frietos it was a hit in my house!!!!!

Chicken Parmesan

Well my husband is Italian and it is hard to put anything in front of him that isn't pretty authentic italian food, but this was a keeper he loved it. I served it with some pasta and a little extra sauce, I didn't have fresh basil but sprinkled a little dried basil on each breast but other than that followed the directions and it was quick, easy and delicious !!!

Country Chicken Casserole

This was extremely easy ,very filling and i really enjoyed it. Even my son who is a really picky eater had two bowls of it, but too funny he had to look at the recipe to see if i was telling him the truth that there wasnt anything he didnt like in it. For my taste I added a little salt and pepper to the raw chicken and I put a little more onion rings on it and topped it with a little sharp cheddar cheese, this is a keeper!!

Italian Meatball Sandwich Casserole

this recipe was a hit in my house full of 5 boys teenagers who are very picky and very hungry. I did make a little change I put the cream cheese and mayo mixture in a zip lock baggie and cut one small corner off the bag and I squeezed the mixture over the bread cubes, then spread with a spatula it worked fantastic. I had to make two pans it was so good!!!! Its a keeper in my recipe file!!!!
