Chocolate Chip Banana Bread II

Just like all of the other reviews, I have to say this is fantastic. Easy, delicious and so moist. I used butter as well in place of shortening and it turned out fine!

Quick and Super Easy Chicken and Dumplings

Super easy and quick. This is a great warm meal on a cold night. Added with some mixed vegetables and rice on the side, it's a comfort-food, familiar meal.

Chocolate Cereal Bars

Wow! Yum! These are great. My roommate and I ate a whole 8x8 pan in one night!!! Of course, it never hurts to have more coating then krispies! I love sticky, chewy bars so I like to alter the recipe so that there is more than enough coating!

Creamy Hot Cocoa

I love this! Unlike many other recipes I use, I don't adapt this one at all. It's great making a serving for myself, or enough for all of my roommates. I love adding whipped cream (not the fake stuff!) and sometimes even peppermint schnapps on a really cold day!

Fried Mozzarella Cheese Sticks

These really didn't turn out that great. I couldn't get the breading to stick. I might try them again at some point just to make sure last time wasn't a fluke. But, I'm not thinking it will be anytime soon.

Old Settlers' Baked Beans

This is such a great comfort food recipe. My mom used to make it when I lived at home. It's been at least 6 six years since I've had them and decided to make them myself. My roommmates and I loved them! They are great with cornbread! I made a couple changes the first time, and will make some more the second time. I added extra of the ketchup, bbq and brown sugar by maybe 1/2. I didn't even add white sugar. I also fried the bacon separately. This took longer, but I like the results even though I hadn't done it the other way first. Next time I would not add so much meat. It just felt like tons of meat to me. I'd also like to try it in a crock pot next time like my mom used to do.

Black Bean and Salsa Soup

This is a great simple super-quick recipe that lends itself to personal taste. I like to blend half of the beans and keep the other half whole. I also love sweet corn and plenty of cayenne or chili pepper added in. I've even added slightly undercooked rice once. Different salsas are fun to try out and experiment with different tastes.

Peppy's Pita Bread

Easy and yummy. I don't use a bread machine either. I've actually found that no oil makes my pitas turn out better, but who knows... My roommates love these and they disappear quickly. We had them with Sean's Falafel recipe (and Cucumber Sauce which I didn't make) from this site.

Easy, quick and yummy. I accidentally left my unfinished pita with this salad in my mom's fridge after visiting her. She asked me a few days later what I had left because she had eaten it and loved it!

Sean's Falafel and Cucumber Sauce

This was a great recipe. I've tried several different ones. I found this one to have the best seasoning so far. And my roommate who is pretty sensitive to onions and such even had seconds!! My only complaint would be that it was a little mushier than I like (may be my fault). I did end up making 16 or so small patties and found it fed 5 people with leftovers for one more. I didn't make the cucumber sauce because I already have a tzatziki sauce that I like.

Boiled Bagels

I've made these bagels several times since finding this recipe. My roommates loved them! They were very easy to make! My roommates especially loved wheat bagels with cranberries and walnuts. The only thing with this recipe is that it doesn't make enough! I tried doubling the recipe, and the dough was so hard to knead, and so they didn't rise as much. Perhaps that's just me though.

Easy Salmon

yum! extremely simple and good!! i didn't put the mushrooms on cause i don't eat them, but the salmon was still so yummy (even tho i had used frozen salmon). i'm giving it 5 stars because it's so simple yet so good.

Quick Cake

this is the easiest recipe I've used for a cake, used it a lot when I was working Tanzania (Africa) and was great because of my lack of a fridge to store milk, eggs, etc! The recipe I use is slightly different as there is no baking powder used. I always make a chocolate sauce to go on top, and almost always end up serving the cake warm from the oven with the sauce spooned over top. Yummm!!
