I am a busy stay at home mom of 3 girls. I love to cook and try new recipes. I enjoy spending time with my family whenever I have the chance. I love to bake just about anything so I am well liked by my neighbors as I give them a lot of my baked goods. If I ate everything I baked, I would be as big as a house!
My favorite things to cook
I love to cook Italian meals because they usually go pretty far and the kids love pasta dishes. As for sweets, I love making cookies and cakes. I love anything chocolate!
My favorite family cooking traditions
Being of Mexican decent, I love to get together with the family at Christmas time and make tamales. We make pork tamales and it is a family affair and it takes all day. I am hoping to pass this tradition on to my 3 girls.
My cooking triumphs
Usually all my baked goods come out good and people come back for seconds. I have a fantastic family recipe for a homemade carrot cake that always make them come back for more. I also make a mean chocolate chip cookie!
My cooking tragedies
It took me a while to make Spanish Rice. I would get so mad when it wouldn't come out right that I would throw the whole thing in the garbage. I got it down now and I don't even have to measure anything.

Banana Crumb Muffins
This recipe was so easy and the muffins were sooo good! I made them exactly as written. It does make about 12 muffins with a lot of topping but who am I to complain :-) My whole family loved them and it is nice to have hot, fresh, homemade muffins in about 30 minutes. Thanks for sharing this recipe. I would definitely recommend making these for your next breakfast! I think I may add some nuts next time.

Beef and Bean Chimichangas
These came better than I expected! I followed the recipe except I didn't have any taco sauce to I just used taco seasoning with water. They were not crisping as fast as I wanted them too so I put them under the broiler for a few minutes and that did the trick!. My 3 girls all loved them too, definitely a keeper. I can't wait to try them with different filling. Thanks for the recipe.

Mexican Bean Salad
This was really quick, easy and very flavorful. I made it for a potluck family reunion and it went fast! I followed the recipe exactly and the only complaint that I have is that it made quite a bit of dressing. I think I will lessen it next time. It tastes better the next day after sitting in the dressing. This is definitely a keeper!
