Daddy's Fried Corn and Onions

Everyone loved this. I added bacon as suggested and added the butter to the bacon fat. Seasoned with kosher salt and pepper.

Italian (turkey) Sausage & Tortellini Soup

My husband keeps requesting this. I used hot turkey sausage. I made some changes based on reviews: - Subbed beef stock for broth and doubled it. - Added meet or cheese tortellini instead of the beans. - Added more carrots and an onion. - Added a can of Rotel with the tomatoes - Added some chipolte chili powder for a smokey flavor. This is definitely company food!

Sesame Beef Bites

Excellent. I've used ribeye and beef tenderloin and marinated overnight. We ate this as our entree with balsamic rice.

Ham and Potatoes Au Gratin

My husband loved this. I did too, but he REALLY loved it. I doubled the recipe and we had plenty of leftovers. I also took suggestions about topping it with panko and some cheese. The slight crunch added a nice dimension. Another keeper recipe in my house.

Ham and Cheese Quiche

This was delicious. It was lighter than most quiches, which I loved. My husband and son loved it - my son at half of the pie! I used a frozen deep dish pie crust and precooked it. The fresh spinach was excellent. I think the thing that made this special was the layering. Most quiches I have made were a bunch of mixed ingredients poured into a crust. Oh, I used leftover honeybaked home which is wonderful. This is a keeper! Thanks.

Hot Ham and Cheese Sandwiches

The dill seed ruined this. It was just too strong. Without that it would have been OK. Needs more butter and I will try a version of this with horseradish and Dijon mustard. It needed a bigger bite.

Ham Stew for Two

My son and husband said we must have this again. I made as directed, but I used beef stock because what I had was about to go bad. I used Honey Baked Ham and doubled the recipe since I had three eating. I may have added more ham than called for. There were no leftovers and both men asked me to make it again. That's high praise!

Ceviche Self-Portrait

I had never eaten ceviche, but it sounded interesting. YUM! It was fresh, light, had the right heat and I loved the texture. I halved the recipe since I was just feeding a few people. I followed the recipe, except I let it set for several hours. Also, for convenience I spooned it into the scoopable tortilla chips. I think adding an avocado would be good

Cream Cheese Penguins

I made these for two New Years Eve parties. Talk about a hit! People were taking photos - adults, little kids and teenagers (not all at the same party). I placed them on a plate of shredded coconut which looked like snow. I had three sizes of black olives and found that even using the same size olive for one penguin looks great. They were time consuming to make, but the result was worth the effort. Several people said they tasted great - black olives and cream cheese aren't my taste. Thanks for the great idea!

Chocolate Trifle

This was my first attempt at a trifle. I'm not a dessert maker, but I had so much fun making this. I added strawberries to the edge of the brownie layer - it looked even prettier and they tasted great. Next time I'll add more. I followed other suggestions and used real cream in the pudding layer. However, next time I'll beat it longer because it was a little runny. Tasted great, but thicker would have been prettier.

Barb's Supreme Curried Ham and Egg Stacks

Awesome! The sauce makes the dish. I fried my eggs, but I'd rather have them poached. I used extra spinach - tasted great and gave me a little extra nutrition. Instead of Black Forest Ham I bought Canadian Bacon. The size of the slice was perfect for an English muffin.

Breakfast Casserole II

I made this ahead of time to heat up on a camping trip. I added the cheese while heating it up over the fire - and covered it tightly with foil. I added fresh mushrooms, but the red peppers and onions would be a great addition. Do add salt and pepper. I thawed the tater tots. Use those instead of hashbrowns. The crispy outside of the tater tots made this even better. It was a huge it with my entire crowd.

My Favorite Cornbread

There's a reason I trust the reviewers - they're RIGHT! I fixed this ahead of time to take on a camping trip and served it with Chili Rick's from this site. Talk about raves. I followed others suggestions and cut the butter in half, used a little less sugar (even though my clan has a huge sweet tooth), added a 7 oz. can of chilies and dumped in a little extra cheese. The suggestion to use Jiffy corn bread mix was genius. I'm making it again tonight - to eat with the leftover Chili Rick's that also was a major hit with our group of 12. Thanks to all.

Garlic Aioli

This is wonderful. Do be careful about the amount of lemon - and be sure to use fresh squeezed lemon juice. I love garlic so I add a little more. I use olive oil mayo - we like it better and it has fewer calories. I keep a container of this in my fridge.

My Crab Cakes

Delicious. I've made this several times. Be sure to make the aioli - the recipe is in one of the top comments. I've used fresh crab and canned crab and a combo of the two. All were good, but I think I liked it with just canned best. That surprised me since I just assumed the fresh would be best. I followed the recipe, except I only used one sleeve of Ritz crackers as suggested. More would have made these like the cheap crab cakes you can buy at the store.

Cucumber Soup I

I thought I'd love this because I LOVE cucumber soups. But I must have done something wrong and I hope someone can tell me what my problem was. I meant to make the soup as written, but substitute the dill, which I love, for the tarragon, which I don't care for. I accidently bought Cream of Rice instead of Cream of Wheat, but I thought it would be OK. The soup was so thin it was weird to eat. (Might have been better if I had added chunks of cucumber). I tried adding more sour cream - it didn't help much. I don't know much about Farina and the Internet wasn't a great deal of help. My heart tells me this would be a keeper for a cumcumber soup nut like I am.

Anniversary Chicken I

Delicious! I wasn't sure about the flavors, but it worked. I didn't have teriyaki basting sauce and I find the store bought teriyaki way too salty. I combined teriyaki, soy sauce and honey and thickened it over the stove with cornstarch and water. When it was the right combo of sweet and salty I brushed in on the chicken. I didn't have shredded cheese so I put a small piece of cheddar on the chicken. I used real bacon, and probably more than 1.5 oz. But who can go wrong with bacon! I served over thin spaghetti. I think only a thin or angel hair pasta would work with this.

Grandma's Doughnuts

I've been making these doughnuts for years for camping trips. I use the inexpensive, thinner canned biscuits and just tear a hole in the center. My Dad used to make a sugar glaze for his that was good, but for camping we just drain them and sprinkle - or douse - them with confectioners sugar. There are perfect for camping.

Bacon Ranch Pasta Salad

I loved this pasta. I made as directed, an added a chopped seeded English cucumber and grape tomatoes instead of a chopped tomato. Oddly, we liked it best when it was just made. My sons said it was too rich after it chilled for several hours. I disagree so I kept it at 5 stars. This makes a lot. Next time I'll half the recipe because I'm the only one who loves leftovers. It was great taken to work. I added some chopped artichoke hearts to one serving and like it a lot - but if you don't like artichokes don't bother. Thanks for a great recipe.
