Asparagus Casserole II

This is one of my late mother-in-law's holiday staples. My kids still ask for it for holiday meals. It's not healthiest, but it is one of those ulitmate comfort foods that always has a place at the table.

Banana Sour Cream Bread

AMAZING!!! The sour cream is the secret ingredient. I bought the wrong size pans so I made 3 from the recipe. I've never baked anything, so I didn't realize how much it would rise. The result was a "muffin-top" loaf but the taste was amazing. I cooked it longer - until the toothpick (in this case a skewer) came out clean. Oh my, it was fabulous. I did add a topping recommended by one of the top reviewers - delicious. I didn't have quite enough walnuts - next time I'll add more. Overall, it was easy, inexpensive, and most of all - DELICIOUS!

Sweet and Spicy Green Beans

The whole family loved it. The only change I made was to boil the beans for a few minutes and then added them to the skillet. I may try this with other types of beans - should be awesome as well.

Traditional Gyro Meat

This wasn't even close. The meat tasted and felt like a dried meatloaf with no flavoring. I followed the recipe exactly - I even bought expensive ground lamb. I wasted my money. I used it for gyros, but even the other flavors in the pita didn't help. Gyros are a family favorite and I thought this recipe might be one that would let us make them at home. We'll stick to restaurant gyros from now on - it's cheaper, easier and tastes a whole lot better.

Turkey and Quinoa Meatloaf

This was so good! I didn't have tomato paste on hand, so I used ketchup. I'm always looking for ways to use quinoa - it gave this a nice flavor. I shaped it into a loaf and cooked it in a pan as suggested by a reviewer. I plan to make it again this week - ground turkey has been on sale.

Actually Delicious Turkey Burgers

These really were good! I added an additional egg as directed, and made my own bread crumbs in the food processor. I also dusted them with flour to help develop a crust and hold them together. My family prefers ground beef burgers, but these are a great change of pace. I'd like to try them on the grill, but I can see where they might fall apart. I liked them with the usual burger toppings.

Simple Turkey Chili

My family keeps asking for this. Tasty and quick. You can experiment with the spices, vegetables and beans. I find peppers are a great addition. I sometimes eat mine with tortilla chips - I love the crunch.

Sesame Pasta Chicken Salad

We loved this - hubby says it's on the keeper list. I made it as directed, only I accidentally grabbed parsley instead of cilantro. Maybe that was good because my husband hate cilantro - I love it. Next time I'll add more veggies - tomatoes, mushrooms, zucchini, squash, onions, carrots, whatever - would be great. I may have added a little more chicken - it's what I had. I think beef would work, or maybe shrimp. The chicken was just right. The dressing is really good. I had some toasted sesame seeds, but I think I like them better when I toast them myself. Overall this is a fabulous recipe and one we will be having often! Oh, it's very easy and could be done ahead of time - important for my busy family.

Mile High Green Chili

This may just not to my liking. I followed the recipe with two exceptions: I had to sub Pablaneo or Anaheim peppers (my store was out of the Anaheim), and I used pork loin instead of pork shoulder. The veggies were too mushy, and the entire thing was too hot. I love hot, but this wasn't a good hot. Maybe I didn't roast the veggie properly, but this wasn't for us. I've tried one green chili recipe that I liked, I'm determined to fine the very best.

Balsamic Roasted Pork Loin

This was wonderful! Hubby hates vinegar. He never knew it was there. I scraped the bottom of the pan, added a little more olive oil and white wine in a pan. Heated, adding a little flour through a small sifter (to avoid lumps). Add a little salt and pepper and this dish goes from delicious to company worthy. Good, inexpensive and tasty.

Cuban Picadillo

This was wonderful and I enjoyed it for lunch for several days. I took some suggestions: I bought a jar of Sofrito to cook with the ground beef. I had no idea how much to add, but since I had 3 lbs. of beef I added the entire jar. I left out the tomato paste. I'd like to make my own Sofrito - it tasted a lot like pizza sauce which means I can make something even better. I rinsed the olives to remove some of the salt. I used the full amount of raisins and olives - don't omit either. We ate it over white rice with mixture of black beans and Rotel (with a little cumin added). My teenaged son wasn't crazy about it, but he's just now learning to deal with different flavors. Husband loved it! It's in my Top 10!

Slow Cooker Pulled Pork

This is amazing. Who would have thought root beer - which I really dislike - would create such a wonderful pork dish! I used pork loin the first few times. I'm going to try other cuts as well. Sweet Baby Rays sauce is our choice.

Spicy Shrimp and Grits

EXCELLENT. I've had many shrimp and grits meals, and this was among the best - and certainly one of the easiest. Here's what I did differently: Used 3 cups of unsalted chicken stock for the grits. Added no extra salt and used unsalted butter to saute veggies. Used red pepper instead of green because I like it better. Added a package of beef smoked sausage. I used "mild" Rotel and smoked sausage instead of andoullie because my son can't deal with too much spice. Next time I'll use either original Rotel or andoulie - both might be too much. I thought I would like it "deconstructed" better, but cooking is more like a casserole was fabulous. This is definitely "company food."

BBQ Pork Salad with Summer Fruits and Honey Balsamic Vinaigrette

I love this. The dressing is wonderful and would be good on any fresh salad. I like it with a mixed lettuce blend - especially with some "nutty" tasting varieties. Peeled peaches could easily sub for nectarines. I liked the grapefruit. Marinated grilled shrimp would work well, as would chicken or very thinly sliced steak. The dressing is the key - from there add what you like.

Italian (turkey) Sausage & Tortellini Soup

My husband keeps requesting this. I used hot turkey sausage. I made some changes based on reviews: - Subbed beef stock for broth and doubled it. - Added meet or cheese tortellini instead of the beans. - Added more carrots and an onion. - Added a can of Rotel with the tomatoes - Added some chipolte chili powder for a smokey flavor. This is definitely company food!
