Mexican Mole Poblano Inspired Chili

Yum! I omitted the beer entirely, and used about 1/4 C of cocoa powder instead of the chocolate (since I didn't have either of these ingredients). I will be making this again, probably adding corn and another can of beans.

Ham Chowder

Yum!! I didn't use rosemary because I was out, but put a little sage in instead. Also, I think this was super tasty day one! The recipe makes a TON, but that just means theres more to be had another night when we're eating out of the freezer! Thanks!

Ricotta Cake

This was good, but I think could be better... I used a bunt pan and inverted after cooking. Also I smooshed some frozen blackberries and put on top of each piece before serving, which was super yummy. Feels like the recipe is missing something, just haven't figured it out yet...

Peanut Butter Cookies with Chocolate Chunks

I just made these. Literally - not all are out of the oven yet. I love PB Choc Chip cookies, and I have another recipe but it calls for so much oil I decided to seek out another. So glad I did! My boyfriend (who is a major sweet lover) actually stopped playing XBox to come get another and announced to all his friends that they were missing out. The only changes I made were creamy PB (didn't have chunky), using about 1 C choc chips instead of chunks, and I added about 2T cinnamon vanilla non-dairy coffee creamer at the end because the dough looked dry. Don't know that I can taste it, but the finished product is super yummy!!

Cranberry Upside-Down Cake

Sooo good and way easy! My partner loves his pineapple upside down cake, and this was a great variation that we both loved. The nuts add a nice touch

Potato Salmon Patties

For two college kids who have never made much before, this was super easy and super yummy! I even fudged it a little - since I only had one small can of salmon I added a can of tuna and no one noticed.
