About this Cook
I am a RNY Gastric bypass patient who is now about 1.5 years on the losing side - having lost over 130 pounds and am successfully keeping it off. I try to find recipes that are healthy, high protein, easy on the carbs (but I don't avoid them like the plague), and easy, and most importantly, delicious!
My favorite things to cook
My hubby and I eat a lot of chicken and ground turkey. I am trying to find ways to incorporate tofu into my cooking without raising my hubby's suspicions. I do still enjoy making the 'comfort food' recipes.

Eileen's Spicy Gingerbread Men
I've used this recipe for several years now and have never had a problem with it - I make it exactly as it is. The dough is easy to roll out and the cookies come out tasting fantastic. Do watch while they are in the oven - it depends on how thin you've rolled out your dough and how hot your oven runs. It's just common sense no matter what the cookie recipe.

Classic Goulash
Very, very delicious! The only thing I added was chopped, green pepper. I also cut the recipe in half, and it still makes a lot! Will definitely be making this again.

Mom's Zucchini Bread
I have a recipe that is very, very similar to this - the only difference is that I use 1 1/2 cup of sugar instead of 2 1/4 cups. To me, that almost sounds like too much sugar. I also add raisins - anywhere from 1/2 cup to 1 cup. Makes for a nice, chunky bread. Everything else is spot on, so I know this recipe is a winner.
