Best Big, Fat, Chewy Chocolate Chip Cookie

a wonderful cookie! crisp around the edges and chewy in the middles, just how a good choclate chip cookie is supposed to be!!! ...but based on the previous reviews about it being too sweet, i adjusted the amount of sugar called for and put in only 3/4 cup brown and 1/4 cup white (which was still a little too sweet for me, but everyone else loved them). instead of 3/4 cup butter, i used 1/4 cup butter-flavored shortening and 1/2 cup butter just because i think cookies made with shortening have a better texture than using just all butter. i also added 1 tablespoon molasses to ensure a soft chewy texture even after storing the finished cookies in the fridge (to reheat, just pop in the microwave for about 7-10 seconds on high). instead of chocolate chips i used chunks of semi-sweet european couverture (about 150 grams) and added half a cup of walnut pieces. what's IMPERATIVE is that you refrigerate the dough for at least an hour before dropping them onto your cookie sheet. i only make 6 cookies at a time because that's all that fits on my cookie sheet and space is definitely needed for these babies to grow into big fat cookies. i also make sure to keep the rest of the dough in the fridge until i have to make the next batch, ensuring a fresh batch of fabulous, chewy cookies every single time. fabulous recipe! thanks elizabeth!

Zucchini Bread IV

Great way to use up all my zucchini. I substituted the white sugar with brown sugar (I ran out!) and 1 teaspoon gingerbread spice for the third teaspoon of cinnamon - and it made the kitchen smell like Christmas in August! I also made sure to place a pan of hot water on the bottom of my oven because of the dry climate in my area. That extra step insures a wonderful, dense texture that improves with time. This zucchini bread tastes great fresh out of the oven, and AMAZING after a night in the fridge - just make sure to wrap it up in foil so it doesn't dry out! I have friends who absolutely DETEST zucchini but pester me to make this again and again! Very, very good!!! This recipe turns out one 9"x5" loaf and 8 muffins.

Cream Cheese Frosting II

Yummy!!! I made this with Nan's recipe for Best Carrot Cake Ever (also on this site)... A WINNING COMBINATION!!! PLEASE TRY IT!!! Plenty of frosting left over, but we took care of that and ate it up with graham crackers and strawberries! :)

Best Carrot Cake Ever

I think I will never so much as look at another carrot cake recipe EVER AGAIN. Great recipe, Nan!!! My whole family loved it... even better than store-bought. I used it with Janni's recipe for Cream Cheese Frosting II (also from this site)- and it turned out PERFECT!!! I will definitely be making this over and over again... and I doubt that we will ever even BUY carrot cake from a bakery again, either. THANK YOU SO MUCH!!!

Italian Spaghetti Sauce with Meatballs

A teaspoon of oregano makes this dish even better than it already is. :D Thanks for a great recipe! The leftover meatballs are wonderful stuffed into a hoagie bun, topped with warmed sauce, pizza cheese and placed under the broiler until the cheese melts. YUM!!!

No Roll Pie Crust II

Really good crust! :) I made it for a banana cream pie and it turned out wonderful. I can't wait to try this out with a quiche! I'll probably be using this recipe for all the single-crust pies that I make in the future.

Restaurant-Style Coleslaw I

Tastes EXACTLY like what you would get at the deli. I couldn't believe how good this coleslaw was. I added more buttermilk simply because I love cooking with buttermilk, but I couldn't believe I had actually made coleslaw that tastes just as good, if not better, than restaurant coleslaw. PERFECT!

Sweet Pasta Salad

I was looking for the sweet-tasting pasta salad like they have at the deli. But this one turned out a little too sweet for me. I adjusted it a little by adding less sugar than the recipe called for and mixing in buttermilk to add some tartness. The buttermilk added a wonderful creaminess and balanced out the sweetness! I would definitely make this again.

Aunt Mary's Eggplant Balls

My husband and I are on a diet and I thought these would be a perfect replacement for real meatballs. They're not bad... I'm eating them right now in a pita with Zaziki (greek yogurt sauce with cucumbers and garlic)... I added more garlic, gyro seasoning, pepper, and onion powder to the mixture, which made them smell wonderful while they were cooking in the oven. The flavor is pretty good but it's definitely no meatball substitute as it does not have the texture I was looking for. I might try to make this again with lean ground beef instead. I guess I expected them too much to taste AND feel like meat. They look really good, they smell fantastic, but they just don't feel like how I thought they were supposed to. I'm sure vegetarians will like this recipe, but for carnivores and meat fans like myself, it just doesn't cut it.

Mom's Chicken Cacciatore

Tastes almost like my mom's cacciatore! The only difference is that my mom's recipe has no peppers and she adds chunks of bacon (not the skinny breakfast kind, the big, thick slices you buy at the butcher's) while the garlic and onions are being sauteed. You'd be surprised at how much flavor a few chunks of bacon can contribute to this dish!

Best Brownies

pretty good... just a little on the sweet side. i would make these again, but maybe with a little less sugar. we didn't like the icing very much, it was just too, too sweet and we found the honey-flavor a bit off (besides, the brownies are sweet enough on their own). but the texture of the brownie was great! smooth, velvety, chewy!

The Best Lemon Bars

Wonderful!!! Like a little slice of sunshine! The crust was buttery and luscious, tender but not crumbly. I would add a little salt to the crust next time, just to give it a little flavor (or maybe use salted butter). For the topping, I used 1/2 cup of fresh lemon juice with pulp and added a teaspoon of grated lemon rind. Fantastic! Tastes like summer. :D
