Antipasto Pasta Salad

This was very good. The only change I made was I used tri colored rotini instead of shells. Everyone loved it. I will definitely make this again. It only took about 20 minutes from start to finish. As the pasta was cooking, I cut up the other ingredients , mixed them up and added the pasta once it was ready. Easy and good. Just what I needed at the time. Thanks for sharing

Best Baked French Fries

Needed a quick French Fry recipe. Found this one and didn't even have enough time to read the reviews, which I always do. The only change I made was I used Red Potatoes because that's what I had on hand. This was a winner with both the adults and the kids. There were none left and I made a double batch. Definitely a keeper as written. Now I'll take the time and read the reviews and see what others recommend.

Chef John's Chicken and Mushrooms

Loved this recipe. However, I cooked the chicken on the grill and cooked the mushrooms inside some aluminum foil on the same grill and added them at the table. Definitely a keeper. I know I didn't follow the recipe as written, but rated it with five stars because I felt the mushrooms went well with the chicken.

Hush Puppies

I read several of the reviews where they said they were runny, or too wet. So were mine. I couldn't get them to clump up in balls. That's not to say these weren't bad. I followed the recipe exactly except I added a little sugar. Very good. I will also try these again to see if I can master the batter by getting them to clump up better

Sauteed Scallops

I seasoned almost as written, except for the rosemary only because I didn't have any. I also didn't remove the garlic from the pan when complete, but removed the scallops. They were delicious. I also prepared them over a high heat that I think locks the juices in. You just have to be careful to not over cook them. Also, it's very important to wash (rinse) the scallops if you buy Sea Scallops like I did. Overall, I gave this five stars because this is definitely a keeper.

Stuffed Green Peppers I

I gave this four stars because I did what many others did and added basil, oregano, and garlic. I also used half the tomato soup. Next time I will also omit the cheese to make it a bit healthier. I'll also try it with some seasoned tomato sauce next time instead of the tomato soup. Overall a good recipe one can season to their tastes very easily. Definitely a keeper.

Banana Pancakes I

Sushi Roll

This was the first time I have made Sushi and I loved it. I didn't roll it tight enough and next time i will make twice the rice. Very good and way cheaper than buying it at the restaurant and better than store bought. I will make again and again.

Garlic Salmon

I've made this a couple of times. First time was as it was written. This last time I used lemon juice and garlic powder. Both were really good. The dill sets it off. This is a keeper.

Spinach Manicotti

My family took a vote and agreed on four stars. They liked it, ate it, and will want me to make it again. Personally, I loved it and would have given it five stars with a few adjustments. I also added feta cheese, cooked the manicotti prior to stuffing and added home made spaghetti sauce (from this site). All in all a very good recipe that we enjoyed and will enjoy again. Thanks for sharing.

Pizza Dough III

I've been looking for the perfect pizza dough and still haven't found it. However, this is the best one I've tried so far (and I've tried several). I will keep tweaking this one and hopefully make it perfect for my family since this is the best start I have. Thanks for sharing.

Easy Pizza Sauce III

This is quick and easy, which I like. I use this recipe on all our home made pizzas with one change, I add 3 teaspoons of olive oil which I think enhances the flavor. Thanks for sharing.

Olive Oil Dip for Italian Bread

I found this recipe after looking for a bread dip. I have a heart condition and shouldn't have bread and butter so this fit the doctor's bill. I didn't measure the ingredients, mixed them all together, omitted the cheese and added oregano (I love oregano) and it was great. I would recommend this to all who are eating a heart healthy diet. But be sure to use whole grain bread.

Salmon with Dill

I needed something quick for dinner and had a Salmon Fillet. Tried this recipe and was pleasantly surprised at how good it tasted. The only change I made was I omitted the salt because I'm on a low sodium diet. Thanks.
