Beef Au Jus

It is a Christmas tradition in my home to serve Standing Rib Roast for dinner. I have tried many different au jus to go with the roast, this was by far the easier and tastiest. This is a keeper, thank you for sharing!

Foolproof Rib Roast

Rib roast for Christmas dinner has been a tradition in our house for the last 20 years. When I received this recipe via e-mail from All Recipes I was intrigued. It is a method of preparing a rib roast that I had heard of but have never tried. My daughter was a little concerned that I was going to attempt this “new” method when we were having 15 people for Christmas dinner. I must say that was the best decision I made when planning this meal. The roasts (I had 2 x 7 lb roasts) came out perfect. Everyone loved it! I will be preparing Christmas dinner this way from now on! The only thing I might change is to reduce the cooking time, the roast was a little more well-done than my family likes it. On the other hand it was a perfect medium for my guest who prefer it a little more well done.

Corned Beef Hash Cakes

I make something like this which my family really loves. I use 1 can of corned beef. Instead of mashed potatoes, I bake a couple of potatoes in the microwave and mash it into the corned beef. I add a couple of eggs, green onions, mix well. Form the patties and fry in oil. This recipe does not have the problem of falling apart.

Sausage Potato Bake

Quick and easy recipe. My kids love it. I've made this several times with the beef soup. One night I did not have beef soup on hand so I tried Campbell's Southwestern chicken soup...BETTER YET! Adds wonderful flavor. I also use more sausage than called for (2 #) and add fresh sliced mushrooms. Top with shredded cheddar cheese, perfect!

Zucchini Casserole II

Finally found a way to cook zucchini that my kids would eat. I had a bumper crop of zucchini & yellow summer squash so I used a mixture of the two, worked great. I sprinkled cheddar cheese over the zucchini before topping with stuffing mix. I also used more stuffing mix (8 oz can).

French Toast Souffle

Made this for a bunch of girls my daughter had over for a sleepover. Being able to prepare it the night before was a big help. Even the picky eaters loved it...no leftovers!

Leftover Turkey Casserole

I was looking for new ways to serve the left over Thanksgiving bird and this was a great recipe. I used cut green beans instead of the french style (kids like them better). My family says it's a keeper. Note: I would bake it a little longer, was not heated through at 35 minutes.

Bread Pudding II

This recipe is wonderful...comes very close to the one my mom use to make when I was little. After my mom passed away I searched through her recipes and was not able to find it. Now my children can enjoy the same kind of dessert I grew up with...Thank you!!!

Texas Sheet Cake I

Fast and Easy cake to make. I made it for the first time for a pot luck, got many compliments. We had so many different kinds of cakes that we had left overs for days. I thought this cake tasted even better several days old!

White Texas Sheet Cake

Great cake, yummy! Fast and easy to make. I goofed the first time I made the cake, forgot the baking soda. My kids thought it was good even if it was flat! Didn't take me very long to make if over. My family wouldn't let me throw out the flat cake, they ate it anyway.

Herbed Pork and Apples

The first time I made this dish for my family we had some unexpected dinner guest. It was a hit with every one even with the picky eaters. Next time I make this I would add more apples, they were a big hit, ran out of them before the meat. My daughter entered this in 4H competition, this dish was an important part in her receiving Grand Champion! Wonderful meal!
