Grilled Mahi Mahi

I am Raidermoms husband and I have just made this recipe. Let me say I "HATE" any fish that is not fried. But, this recipe has completely taken me by surprize. It was wonderful and very easy to make. I was going to have the left overs for lunch tomorrow, but there aren't any. Thank you

Grasshopper® Cookie Fudge

I love chocolate and mint together and this recipe satisfies that craving. With the ease of this recipe I certainly won't mind making a batch every now and again when I feel the After cutting, I placed the fudge in the freezer and each day since it's been made I've been "sneaking" a piece....I think I prefer it straight out of the freezer! I plan on adding a few pieces to the cookie tray I'm taking to mom's on xmas eve...the rest will stay in the freezer for me. ;)

Peanut Butter Pie V

This is a wonderful dessert! I must say that the previous person reviewing this must have reviewed the wrong pie, as these you DO NOT BAKE. I like to use creamy peanut butter, a 1# box of powdered sugar (no need to measure it out), a 12 oz. container of Cool Whip instead of two- 8 oz. ones, and when I'm done I drizzle the tops with some Hershey's syrup and add some Reese's peanut butter morsels. Looks great AND tastes great!

Pumpkin Apple Streusel Muffins

Loved this recipe! I made exactly 18 muffins and followed the suggestion of a previous reviewer and diced the apples very fine.....they came out moist as she said..definitely not soggy. The first 12 came out of the oven roughly 20 minutes ago...there are only 5 left and there are only 3 of us here! This recipe will be printed and placed in my recipe binder for sure, thanks for sharing!

Lumpia (Shanghai version)

My husband has craved lumpia's ever since he left the Marine Corp.....almost twenty years ago. I decided to make this recipe for him and our card-party guests and it was a HUGE hit! They always ask if we'll be having these at each card party. They were served with banana ketchup, which I've never had and had my doubts about. That, too, was excellent! My only suggestion for this recipe would be to use low-sodium soy sauce and to cut back a little on the salt. This recipe is one that I will use again and again, thanks for sharing it Cristine!

Basic Ham and Bean Soup

I simple recipe for that leftover ham! I added 2 diced potatoes to the recipe which helped thicken the soup. I also used half navy beans and half northern beans. It turned out delicious! My husband absolutely loved it and wants it to be an 'after Easter' tradition from now on!
